Ingredients
- 250ml Unsweetened Soy Milk (plain, unsweetened recommended)
- 4 cloves Garlic (thinly sliced or minced)
- 2 strips Bacon (cut into bite-sized pieces)
- 1/2 Onion (thinly sliced into strips)
- 2 Button Mushrooms (sliced)
- 30g Broccoli (cut into small florets)
- 200g Tofu Noodles (drained)
- 2 Tbsp Grated Parmesan Cheese (adjust to taste)
- Pinch of Salt (for seasoning)
- Pinch of Black Pepper (for flavor)
- 2 Tbsp Olive Oil (for sautéing)
- Pinch of Dried Parsley (for garnish)
Cooking Instructions
Step 1
Prepare the aromatics: Thinly slice or finely mince the garlic cloves. Slice the onion into thin strips, similar to how you’d cut pasta noodles. This ensures they meld beautifully with the sauce.
Step 2
Slice the button mushrooms into manageable pieces. Cut the bacon into bite-sized strips. This allows the bacon’s savory flavor to distribute evenly throughout the sauce.
Step 3
Blanch the broccoli: Briefly boil the broccoli florets for about 1 minute until they turn bright green. Immediately transfer them to an ice bath to stop the cooking and preserve their vibrant color and crisp texture.

Drain the tofu noodles thoroughly according to package instructions, or simply drain them well in a colander. Rinse them under cold running water for a cleaner finish. Ensure they are well-drained, as excess water can make the sauce too thin.

Heat the olive oil in a pan over medium heat. Add the sliced garlic and sauté gently until fragrant, about 1 minute. Then, add the bacon, onion, and mushrooms. Cook, stirring occasionally, until the vegetables are softened and lightly browned.

Pour in the 250ml of soy milk. Bring the mixture to a gentle simmer. Reduce the heat to low and whisk in the 2 Tbsp of grated Parmesan cheese until it’s fully incorporated and the sauce is smooth and creamy. The cheese will add a lovely salty and nutty flavor.
