Beef and seaweed soup is an essential dish for birthdays, but it’s also a comforting meal that can be enjoyed any day. A well-made bowl of this soup requires no other side dishes. By using beef bone broth cubes, you can create an incredibly rich and flavorful soup with ease, making it a delightful and satisfying meal in no time.
Ingredients
- Dried seaweed, rehydrated, 15g
- Beef (for soup), 1 handful
- Beef bone broth cubes, 3 cubes
- Sesame oil, 1 Tbsp (tablespoon)
- Soy sauce for soup, 1 Tbsp (tablespoon)
- Anchovy sauce, 1 Tbsp (tablespoon)
- Minced garlic, 0.5 Tbsp (tablespoon)
- Pepper, a pinch
- Water, 1L
Cooking Instructions
Step 1
First, prepare 15g of dried seaweed and soak it in cold water for about 10 to 15 minutes until it becomes soft and pliable. Rehydrated seaweed is easier to work with.
Step 2
Gently pat the beef with paper towels to remove any excess blood. Removing the blood ensures a cleaner broth and prevents any gamey flavors.
Step 3
In a pot or a wide pan, heat 1 tablespoon of sesame oil over medium heat. Add the beef (with blood removed) and stir-fry until it’s cooked through.
Step 4
Once the beef has browned on the outside, add a pinch of pepper to enhance its aroma.

Lower the heat to low and add 1 tablespoon of soy sauce for soup. Stir-fry the beef to coat it, allowing it to absorb the flavor and color. Continue cooking until tender.

Rinse the rehydrated seaweed under cold water and then squeeze out as much water as possible. Excess water can dilute the flavor of the soup.

Add the squeezed seaweed to the pot with the seasoned beef. Stir-fry together over medium heat for about 5 minutes. Stir-frying seaweed enhances its unique fragrance and texture.

When the seaweed starts to turn slightly yellowish, add 0.5 tablespoon of minced garlic and continue to stir-fry for another 3 minutes. It’s important to sauté the garlic until its aroma is well released.

Pour in 1 liter of water and add 3 beef bone broth cubes. Stir until the cubes are fully dissolved. Bring to a boil over high heat and simmer vigorously for 15 minutes to develop a rich broth.

After simmering for 15 minutes, stir in 1 tablespoon of anchovy sauce for an added depth of umami flavor. Then, reduce the heat to medium and continue to simmer for another 10 minutes to allow the flavors to meld beautifully.

Taste the soup and adjust the seasoning with salt if necessary, according to your preference. Adding a little salted shrimp (saeujeot) can also enhance the flavor.
