Main Ingredients
  • 500g soft rice cakes (tteokbokki-style recommended)
  • 1 pack of sausages (Vienna or similar)
  • 2 Tbsp vegetable oil

Sweet & Spicy Sauce
  • 3/4 Tbsp gochujang (Korean chili paste)
  • 2 Tbsp tomato ketchup (increase for a milder, kid-friendly taste)
  • 1/2 Tbsp minced garlic
  • 1/2 Tbsp sugar
  • 1 Tbsp corn syrup or rice syrup (for gloss and sweetness)
  • 3 Tbsp water

Cooking Instructions

Step 1

First, prepare your rice cakes and sausages. If using tteokbokki rice cakes, they’re ready to go! If they’re long, cut them into 2-3 pieces, similar in length to your sausages. Cut the sausages into 2-3 pieces to match the rice cake size. Aim for pieces that will fit nicely on skewers, alternating between rice cake and sausage.

Step 2

Preheat your air fryer to 180°C (350°F). Place the prepared rice cakes in the air fryer basket and heat for about 6-7 minutes. This step slightly softens the rice cakes, making them ready to absorb the sauce beautifully. Alternatively, you can lightly pan-fry them in a bit of oil until they’re lightly golden.

Step 3

Let’s make that delicious Soddeok Soddeok sauce! In a small bowl, combine 3/4 Tbsp gochujang, 2 Tbsp tomato ketchup, 1/2 Tbsp minced garlic, 1/2 Tbsp sugar, 1 Tbsp corn syrup (or rice syrup), and 3 Tbsp water. Whisk everything together until smooth and well combined. If serving to children, feel free to add a little more ketchup.

Step 4

Now, gently heat a pan over low heat. Pour the prepared sauce into the pan. Stir continuously with a spatula to prevent burning, letting the sauce simmer gently. Cook until the sauce thickens slightly and becomes glossy. Be careful not to overcook, as it can burn easily. Lower the heat or turn it off temporarily if needed.

Step 5

Heat 2 Tbsp of vegetable oil in a wider pan over medium heat. Add the rice cakes (that were preheated in the air fryer) and fry them until they are golden brown and slightly crispy. Keep them moving to prevent sticking and ensure even cooking.

Step 6

While the rice cakes are frying, cook the sausages. Add the sausages to the same pan and turn them occasionally until they are nicely browned and heated through. Be mindful of the heat to prevent them from bursting.

Step 7

It’s time to assemble the Soddeok Soddeok! Take long wooden skewers and thread the rice cakes and sausages onto them, alternating between the two. Starting from the middle of the skewer can help with stability. Once assembled, dip or brush the Soddeok Soddeok generously with the prepared sauce, ensuring it coats every piece. A sprinkle of sesame seeds on top is a nice finishing touch!
