Main Ingredients
- Curry Roux Blocks (4 servings)
- 1 Onion
- 1/2 Carrot
- 2 Potatoes
- 300g Pork (curry cut or ground)
- 1L Water
- 2 Tbsp Cooking Oil
- Cornstarch Slurry (1 Tbsp cornstarch + 2 Tbsp water, optional)
Cooking Instructions
Step 1
First, let’s prepare the vegetables that will add flavor to our curry. Peel the onion and chop it into large pieces. Peel the carrot and cut it into similar-sized pieces. Wash the potatoes thoroughly, peel them, and cut them into bite-sized cubes. It’s best to cut all vegetables into pieces that aren’t too small so they hold their shape when cooked.

Heat 2 tablespoons of cooking oil in a deep pot or wok over medium heat.

Add only the chopped onions to the heated pot. This is a crucial step for developing the curry’s flavor, so pay close attention!

Reduce the heat to low and sauté the onions slowly, making sure they don’t burn. Cook until the onions become translucent, release a sweet aroma, and turn a light yellow. Sautéing them thoroughly will significantly enhance the curry’s umami. Caramelizing the onions at this stage can create an even deeper flavor.

Once the onions are sufficiently sautéed and smell sweet, add the 300g of pork and stir-fry. You can use pork cut into chunks or ground pork. Cook until the pork is lightly browned and has changed color.

When the pork has changed color, add all the prepared potatoes and carrots to the pot. It’s good to sauté them briefly before adding water, allowing them to mingle with the pork.

Continue to stir-fry the pork and vegetables together for about 3-5 minutes. Lightly searing the ingredients before boiling helps them maintain their shape and enhances their natural flavors.

After stir-frying the ingredients well, pour in 1L of water. Scrape the bottom of the pot to incorporate any flavorful bits stuck there as you pour the water.

Once the water comes to a boil, reduce the heat to medium-low, cover the pot, and simmer for about 10-15 minutes, or until the potatoes and carrots are completely tender. Skim off any foam that rises to the surface for a clearer broth.

When the potatoes and carrots can be easily pierced with a chopstick, lower the heat and add the 4 servings of curry roux blocks (4 pieces). Be careful to add them so they don’t stick directly to the bottom of the hot pot.

Using a spatula or ladle, stir continuously to dissolve the curry roux blocks completely, ensuring they don’t stick to the bottom of the pot. It’s important to melt them smoothly without any lumps.

Once the curry is fully dissolved, simmer for another 5 minutes over low heat. This allows the curry to thicken and develop a richer, deeper flavor. Remember to keep stirring to prevent it from sticking!

If you prefer a thicker curry, you can adjust the consistency with a cornstarch slurry. Mix 1 tablespoon of cornstarch with 2 tablespoons of water to make the slurry. Add it gradually, a little at a time, until you reach your desired thickness. Cook for another 1-2 minutes after adding the slurry to eliminate any raw starch taste.
