Cooking Instructions

Step 1

First, let’s prepare the icy base for our refreshing bingsu. In a zip-top bag, combine 400ml of milk and 200ml of water. Press out as much air as possible, flatten the bag, and freeze until solid. Freezing it flat will help it blend more smoothly later.

Step 2

Now, let’s make the tomato topping. Wash 350g of cherry tomatoes thoroughly. Place them in a blender and blend until very smooth, ensuring there are no seeds or skins remaining. Then, strain the purée through a fine-mesh sieve to achieve a silky smooth texture.

Step 3

In a saucepan, combine the strained tomato purée with 60g of granulated sugar. Cook over medium-low heat, stirring constantly with a spatula, until the mixture thickens to a jam-like consistency. This process concentrates the flavor and sweetness. Once thickened, remove from heat and let it cool completely.

Step 4

It’s time to shave the frozen milk base! Take the frozen milk mixture out of the freezer. If you have a bingsu machine, feed the ice into it and shave it finely. If not, you can use a blender; pulse it in short bursts until it becomes fluffy and snow-like. Ensure it’s finely shaved and not chunky.

Step 5

Transfer the finely shaved milk ice into your serving bowl, creating a nice mound. Generously spoon the cooled, sweet-and-tangy tomato purée over the top. Drizzle with sweetened condensed milk to your desired level of sweetness.

Step 6

Finally, for a little flavor enhancement, sprinkle a pinch of black pepper over the tomato purée. This surprisingly complements the tomato flavor. Garnish with fresh mint leaves for a beautiful presentation. Your delicious and refreshing Tomato Bingsu is now ready to enjoy!
