Salad Ingredients
- 50g plump cocktail shrimp
- 30g fresh cilantro
- 2 Thai bird’s eye chilies
- 20g toasted peanuts
- 1/2 pomelo (or grapefruit)
Cooking Instructions
Step 1
To maintain a pleasantly firm texture, briefly blanch the cocktail shrimp in boiling water. Be careful not to overcook them, as they can become tough.

Wash the fresh cilantro thoroughly, pat it dry, and then chop it into roughly 1-2 cm pieces for easy eating.

Remove the stems from the Thai bird’s eye chilies, wash them under running water, and then finely mince them. You can adjust the amount to your preference for spice level.

Finely chop the toasted peanuts using a knife or a food processor to add a nutty aroma and texture. If you prefer a coarser texture, chop them less finely.

Peel the thick outer skin of the pomelo (or grapefruit), then carefully separate the segments. Prepare them so they are easy to add to the salad. It’s best to remove as much of the bitter pith as possible.
