Main Ingredients
- Bean sprouts 270g
- 1 stalk of green onion
- 2 shiitake mushrooms
- 1 handful of medium-sized dried anchovies
- 1 piece of dried kelp (approx. 10x10cm)
- 2 chili peppers (e.g., jalapeño or red chili)

- 1 Tbsp minced garlic
- 1 Tbsp sea salt or regular salt
- 1 Tbsp anchovy sauce (fish sauce)

Cooking Instructions
Step 1
Before you start cooking, if you’re using dried shiitake mushrooms, soak them in warm water for about 10-15 minutes until rehydrated. (Fresh shiitake mushrooms can be used as they are.)
Step 2
Pour 1 liter (about 4 cups) of water into a pot. Add the handful of medium-sized dried anchovies and the piece of dried kelp. Bring to a boil over high heat.
Step 3
Thinly slice the green onion diagonally. Rinse the bean sprouts thoroughly under running water and drain them in a colander.
Step 4
Once the water starts boiling, remove the kelp. Add the soaked shiitake mushrooms (or fresh ones), the white parts of the green onion (or the root ends), and the two chili peppers (cut in half after removing the stems). Cover the pot and let it simmer over medium-low heat for about 5 minutes to infuse the flavors.
Step 5
After the broth has simmered, add the rinsed bean sprouts and the sliced green onion (including the green parts). Stir in 1 tablespoon of minced garlic. Mix everything gently.
Step 6
Time to season! Add 1 tablespoon of sea salt (or regular salt) and 1 tablespoon of anchovy sauce. Stir well. Cover the pot and cook for another 3-5 minutes, just until the bean sprouts are tender-crisp. Be careful not to overcook, as the bean sprouts can become mushy.
Step 7
Finally, taste the soup and adjust seasoning if needed with more salt or anchovy sauce. Your delicious bean sprout soup is ready! Enjoy its refreshing and clear taste while it’s warm.
