Quick Zucchini Pancakes: A Delicious Side Dish Ready in Minutes
Making Quick Zucchini Pancakes
Zucchini pancakes are one of the easiest Korean savory pancakes (jeon) to make! Sweet zucchini slices coated in a fluffy egg batter and pan-fried create a perfect side dish for any meal in no time. Dipped in soy sauce, they are simply irresistible! They are also low in calories, making them a great option for a diet-friendly meal.
Ingredients
- 1/2 zucchini
- 3 Tbsp all-purpose flour
- 1 egg
- 1 tsp tuna extract (optional, for extra umami)
- Cooking oil, as needed
Cooking Instructions
Step 1
First, wash the zucchini thoroughly and pat it dry. Slice it into approximately 0.5 cm thick rounds. Try not to slice them too thinly, as they can break easily.
Step 2
Place the sliced zucchini into a resealable plastic bag. Add 3 tablespoons of all-purpose flour. Seal the bag tightly, then turn it upside down and shake vigorously. The goal is to coat each slice evenly with a thin layer of flour. This step ensures the egg batter will adhere well.
Step 3
In a separate bowl, crack one egg. Add 1 teaspoon of tuna extract. Tuna extract adds a wonderful depth of flavor and seasoning, but you can omit it if you don’t have it. Whisk the egg and tuna extract together with a fork or whisk until well combined, creating an egg batter.
Step 4
Take the floured zucchini slices out of the bag and gently shake off any excess flour. Then, dip each slice into the egg batter, ensuring both sides are coated evenly. Let any excess egg drip off before placing it in the pan.
Step 5
Heat a frying pan over medium heat and add enough cooking oil to coat the bottom. Carefully place the egg-coated zucchini slices onto the hot pan, making sure not to overcrowd it. Leave some space between each piece.
Step 6
Pan-fry the zucchini pancakes over medium-low heat until golden brown and crispy on one side. This usually takes about 2-3 minutes per side. Flip them over and cook the other side until it’s also golden brown and cooked through. Adjust the heat as needed to prevent burning.
Step 7
Once both sides are beautifully golden and crispy, transfer the zucchini pancakes to a serving plate. These are best enjoyed warm! They are delicious on their own or dipped in a simple soy sauce mixture or some pickled onions for a sweet and savory contrast. Enjoy your incredibly easy and tasty zucchini jeon!
