Quick & Easy Chive Salad: Fresh, Crunchy, and Delicious
Speedy Seasoned Chives (Gochu Namul – Korean Raw Kimchi Style)
This is a wonderfully quick and easy seasoned dish that can be made in a flash! It’s perfect as a standalone side dish, but it also pairs exceptionally well with various grilled meats and stews. Enjoy the healthy, fresh taste of ingredients prepared right before serving.
Main Ingredients
- 300g fresh chives
- 1/2 onion
- 1/3 carrot
Seasoning Mix
- 5 Tbsp red chili flakes (gochugaru)
- 2 Tbsp sugar
- 4 Tbsp vinegar
- 5 Tbsp soy sauce (jin-ganjang)
- 2 Tbsp sesame oil
- 1.5 Tbsp toasted sesame seeds

Cooking Instructions
Step 1
In a large mixing bowl, prepare the seasoning mix by combining the red chili flakes, sugar, vinegar, soy sauce, sesame oil, and sesame seeds. Whisk them together until well combined to create a flavorful dressing. Ensure there are no clumps.
Step 2
Carefully trim and wash the fresh chives under running water to remove any dirt or debris. Shake off excess water and cut them into approximately 5cm (2-inch) lengths. This size makes them easy to eat.
Step 3
Thinly julienne the half onion and the one-third carrot. For the carrot, slicing it thinly will enhance its crisp texture.
Step 4
Add the prepared chives, julienned carrots, and onions to the bowl with the seasoning mix. Gently toss and mix everything together with your hands (‘jomul-jomul’) until the vegetables are evenly coated with the dressing. Be careful not to overmix, as this can make the chives mushy. The key is to coat them lightly and evenly.
