How to Make a Delicious Pork and Crown Daisy Rice Bowl
Enjoy a delightful pork rice bowl without any gamey odor! We’re adding plenty of aromatic crown daisy to enhance the pork’s flavor while balancing richness, creating a truly satisfying meal. This dish is perfect as a simple yet impressive main course.
Main Ingredients
- 200g Pork (thinly sliced for stir-fry or bulgogi)
- 100g Crown Daisy (Shungiku)
- 2 bowls Cooked Rice
Cooking Instructions
Step 1
Let’s start by making a flavorful kelp broth. In a pot, combine 1 sheet of kombu and 1 cup (200ml) of water. Bring to a gentle simmer over low heat. Once the water begins to boil, remove the kombu and set the broth aside. (Tip: Overcooking kombu can result in a bitter taste, so remove it as soon as it boils.)
Step 2
Now, let’s marinate the pork to remove any unwanted odors. Add 1 Tbsp of minced garlic and 2 Tbsp of rice wine (or mirin) to the cut pork. Gently mix and let it marinate for a while. Marinating for at least 10 minutes will make the pork more tender and eliminate any gaminess.
Step 3
It’s time to stir-fry the pork with delicious seasonings. Heat a pan over medium-high heat, then add the marinated pork. Add 1 Tbsp of jocheong (or corn syrup), 1 Tbsp of gochugaru, and 1 Tbsp of gochujang. Stir-fry until the seasonings are evenly coated on the pork. Stir-frying quickly over high heat helps to retain the juices.
Step 4
Once the pork is halfway cooked, pour in the prepared kelp broth and let it simmer. Reduce the heat to medium and let it cook until the seasonings are well absorbed by the pork. Taste and adjust the seasoning if needed, by adding more gochujang or jocheong.
Step 5
We’ll prepare a cornstarch slurry to thicken the sauce. In a small bowl, mix 1 Tbsp of water with 1/2 Tbsp of cornstarch until smooth. Having the slurry ready beforehand ensures a smooth process towards the end of cooking.
Step 6
When the pork is fully cooked, gradually pour in the prepared cornstarch slurry while stirring. Continue to cook until the sauce reaches a thick, glossy consistency. Avoid adding all the slurry at once, as it might clump. Add it little by little while checking the consistency.
Step 7
Now, let’s prepare the aromatic crown daisy. Wash the crown daisy thoroughly and cut it into approximately 4cm lengths. Crown daisy loses its fragrance if overcooked, so it’s best added towards the end.
Step 8
Arrange the nicely cut crown daisy over the warm cooked rice. The fresh green color of the crown daisy will make the rice bowl look even more appealing.
