How to Make a Sweet and Tart Plum Ade Using Fresh Korean Plums (Daeseok variety)

We made a wonderfully fragrant plum ade using fresh, in-season plums. This is a must-try treat when plums are abundant! It’s bursting with the vibrant flavor of fresh plums and has a delightful balance of sweetness and tartness.

Ingredients
  • 4 ripe Daeseok plums
  • 2 Tbsp honey (or sugar, to taste)
  • Ice, as needed
  • 100-200ml sparkling water (or to taste)

Cooking Instructions

Step 1

First, thoroughly wash the 4 fresh Daeseok plums. Remove the stems. Score the plums around the middle with a knife to help with pit removal. Gently twist the plum halves to separate them and easily remove the pit. You will only need the plum flesh.

Step 2

Place the pitted plum flesh into a blender. Add 2 tablespoons of honey to enhance the sweetness. You can substitute sugar for honey, and adjust the amount based on the plum’s natural sweetness and your personal preference. Adding honey or sugar will help create a deeper flavor profile that complements the plums’ natural tartness.

Step 3

Now, close the blender lid and blend until smooth. Process the plums and honey until you achieve a smooth, lump-free puree. If the mixture seems too thick, you can add a tiny splash of sparkling water or plain water to help it blend more easily. This smooth plum puree will serve as the base for your delicious ade.

Step 4

To prepare for a refreshing drink, fill your serving glass generously with ice. Carefully pour the freshly blended plum puree over the ice. The combination of ice and plum puree will create a visually appealing and deliciously cool base for your ade.

Finally, top off the drink with sparkling water for a delightful effervescence. A 1:1 ratio of plum puree to sparkling water is a good starting point, but feel free to adjust the amount of sparkling water to your liking – add more for extra fizz or less for a milder taste.
