Ingredients
- 400g well-fermented kimchi
- 1/2 stalk green onion
- 1/4 onion
- 4 Tbsp perilla oil
- 0.5 Tbsp sugar
- 1 Tbsp tuna extract (or soy sauce)
- A pinch of sesame seeds
- 2 bowls of cooked rice
Cooking Instructions
Step 1
First, let’s prepare the vegetables. Finely dice the onion, as if mincing it. Thinly slice the green onion on an angle or chop it finely.
Step 2
Chop the kimchi into small, bite-sized pieces. If they are too large, they might not mix well with the rice when stir-frying.
Step 3
Heat a pan over medium heat and add 3 tablespoons of perilla oil. Add the chopped green onion and onion and stir-fry until fragrant. Sautéing the green onion and onion first enhances their sweetness and aroma.
Step 4
Once the green onion and onion become translucent, add the chopped kimchi and 0.5 tablespoon of sugar. Stir-fry them together. The sugar helps to mellow the sourness of the kimchi and adds a depth of flavor.
Step 5
Continue to stir-fry the kimchi until it wilts and the moisture evaporates, absorbing the perilla oil. This step is crucial for developing the rich and nutty flavor characteristic of kimchi fried rice.
Step 6
Now, add 2 bowls of hot, freshly cooked rice and drizzle with 1 tablespoon of tuna extract (or soy sauce). If you don’t have tuna extract, regular soy sauce or light soy sauce will also work well. Break up any clumps of rice with your spatula and stir-fry until all ingredients are evenly combined.
Step 7
Transfer the well-stir-fried kimchi fried rice to a serving plate. Sprinkle with a pinch of sesame seeds for an extra nutty finish. Enjoy your delicious perilla oil kimchi fried rice while it’s warm!
