It’s a quick and satisfying dish that combines tender penne pasta with vibrant basil pesto, fresh cherry tomatoes, and lean chicken breast. Perfect for a light yet filling meal that doesn’t compromise on flavor.
Ingredients
- 1 cup fusilli pasta
- 2 cherry tomatoes
- 2 Tbsp basil pesto
- 1 chicken breast (pre-cooked, available commercially)
Cooking Instructions
Step 1
Gather your ingredients: fusilli pasta, fresh cherry tomatoes, flavorful basil pesto, and a pre-cooked chicken breast. Commercially available chicken breasts are very convenient and work wonderfully in this recipe, regardless of brand. Wash the cherry tomatoes and halve them.
Step 2
Cook the fusilli pasta in boiling water according to package directions (usually 8-10 minutes) until al dente. Drain the pasta thoroughly and rinse briefly under cold water to prevent sticking. Slice the cooked chicken breast into bite-sized pieces. Place the drained pasta, sliced chicken, and halved cherry tomatoes into a large mixing bowl.
Step 3
Add the 2 tablespoons of basil pesto to the bowl with the pasta, chicken, and tomatoes. Gently toss everything together until all ingredients are evenly coated with the fragrant pesto. The combination of Italian herbs, fresh vegetables, and protein is simply delightful. For an extra touch, you can sprinkle some grated Parmesan cheese on top. (Optional: For a more substantial meal, serve with sliced mozzarella cheese or leftover toasted baguette.)
