Cooking Instructions
Step 1
[Prepare the Mashed Potatoes] Since mashed potatoes take a bit of time, let’s start with them. Peel the potatoes and cut them into large chunks. Steam or boil them until they are tender and fluffy. While still hot, pass them through a fine-mesh sieve or mash them thoroughly until smooth.
Step 2
[Finish the Mashed Potatoes] To the mashed potatoes, add 1 Tbsp of butter, 4-5 Tbsp of heavy cream, and a pinch of salt and white pepper. Mix everything together until well combined and smooth. Your creamy mashed potatoes are ready!
Step 3
[Start the Wasabi Cream Sauce] Now, let’s create the flavorful wasabi cream sauce. For a richer flavor, using homemade chicken broth is ideal, but for convenience, dissolve 1 teaspoon of instant chicken broth powder in water to make about 200ml.
Step 4
[Simmer the Base] In a saucepan, heat the chicken broth. Add 1 Tbsp of minced garlic and 4 Tbsp of minced onion. Simmer gently to allow the flavors of the garlic and onion to meld into the broth.
Step 5
[Add Liquids] Once the onions become translucent, pour in 100ml of white wine and 200ml of heavy cream. Stir well to combine. The sauce will begin to thicken and become wonderfully creamy.
Step 6
[Reduce and Season] Add 2 Tbsp of lemon juice for a touch of brightness. Season with salt and pepper to your preference. Reduce the heat to low and let the sauce simmer, stirring occasionally, until it has reduced by about one-third to your desired consistency.
Step 7
[Incorporate Wasabi] Finally, whisk in 1.5 Tbsp of wasabi paste, ensuring it’s fully dissolved and evenly distributed without lumps. Remove the sauce from the heat immediately after adding the wasabi to preserve its zesty flavor. Your zesty wasabi cream sauce is complete!
Step 8
[Prepare the Fish Steak] Now, let’s prepare the star of our dish: the fish steak. If using frozen white fish (like sea bream), soak it briefly in cold water with a pinch of salt. Drain thoroughly and pat it completely dry with paper towels. (If using fresh fish, you can skip this soaking step).
Step 9
[Season the Fish] Cut the fish into approximately 8cm (3-inch) portions. Season both sides generously with salt and pepper.
Step 10
[Pan-Sear the Fish] Heat 2 Tbsp of olive oil in a skillet over medium-high heat. Carefully place the seasoned fish portions into the hot pan. Sear for a few minutes on each side until golden brown and cooked through. If your fish fillets are thick, you may want to cover the pan briefly after searing to ensure the inside cooks evenly.
Step 11
[Plate the Mashed Potatoes] Spoon a generous portion of the creamy mashed potatoes onto the center of each serving plate, creating a smooth bed.
Step 12
[Add the Fish and Sauce] Arrange the beautifully pan-seared fish steak on top of the mashed potatoes. Ladle the warm, zesty wasabi cream sauce generously over the fish.
Step 13
[Garnish and Serve] For an extra touch of elegance, garnish with a lemon wedge and perhaps a few fresh herbs or lightly sautéed vegetables. Your impressive white fish steak, reminiscent of a fine dining experience, is now ready to be enjoyed!
