  • 300g Tofu (about 1 block)
  • 1 Tbsp Perilla Oil

Cooking Instructions

Step 1

First, prepare the aromatic wild chives. Gently wash them under running water to remove any dirt. Pat them dry thoroughly and finely chop them into about 1cm lengths. The fragrance of the chives will greatly enhance the flavor of the sauce.

Step 2

Now, let’s make the wild chives sauce. In a bowl, combine the chopped wild chives with 1 tablespoon of gochugaru. Using fine gochugaru will result in a milder color and taste.

Step 3

Add 5 tablespoons of soy sauce, which forms the base of the savory flavor. Using regular soy sauce (jin-ganjang) will add depth to the dish.

Step 4

Next, add the ingredients for sweetness and tanginess. Mix in 1 tablespoon of oligodang, 1/2 tablespoon of sugar, and 1/2 tablespoon of vinegar to create a sweet and sour profile. Stir well.

Step 5

Finally, add 1 tablespoon of sesame oil for a nutty aroma and 1 tablespoon of toasted sesame seeds. Stir everything together with a spoon until well combined, creating a glossy wild chives sauce.

Step 6

Use paper towels to thoroughly pat dry the surface of the tofu. Excess moisture can cause oil splattering when frying and make the tofu soggy. Slice the tofu into bite-sized pieces, about 1.5cm thick.

Step 7

Heat a lightly oiled pan over medium heat. Add 1 tablespoon of perilla oil. Once the oil is warm, carefully place the tofu slices in a single layer. Pan-fry until golden brown and crispy on both sides. Serve the delicious pan-fried tofu with the prepared wild chives sauce.
