Rice Ingredients

  • Fresh bean sprouts (a handful)
  • Your favorite mushrooms (shiitake, oyster, etc., a small amount)
  • Carrot (a small amount)

Spicy & Savory Seasoning Sauce
  • 1/2 Tbsp soup soy sauce (Gukganjang)
  • 3 Tbsp regular soy sauce (Jin-ganjang)
  • 1 Tbsp red pepper flakes (Gochugaru)
  • 1 Cheongyang pepper (finely chopped)
  • Minced garlic (to taste)
  • Scallions (optional, finely chopped)

Cooking Instructions

Step 1

Let’s start by making the delicious seasoning sauce. In a bowl, combine 1/2 Tbsp of soup soy sauce, 3 Tbsp of regular soy sauce, 1 Tbsp of red pepper flakes, 1 finely chopped Cheongyang pepper, and a pinch of minced garlic. Mix everything thoroughly. If you enjoy a spicy kick, feel free to add more Cheongyang peppers! For an extra layer of flavor, you can also add finely chopped scallions.

Step 2

Now it’s time to cook the rice. Rinse the rice thoroughly and let it soak for about 30 minutes. Then, place the soaked rice in your rice cooker. Top the rice with the crisp bean sprouts, your chosen mushrooms (sliced), and shredded carrots. Add water according to your usual rice cooking ratio and press the ‘cook’ button. While the rice is cooking, you can prepare the seasoning sauce to serve alongside. I often add finely chopped Cheongyang peppers to the sauce for extra spice, as I enjoy spicy food!

Step 3

Once the rice is cooked, open the rice cooker lid. Using a rice paddle, gently mix the ingredients, being careful not to mash the rice grains. Gently stir to combine the bean sprouts, mushrooms, and carrots evenly with the rice. This careful mixing ensures that the flavors of all the ingredients meld beautifully with each grain of rice, resulting in a truly delicious Mushroom and Bean Sprout Rice.
