Dubu Kimchi is an indispensable dish for a simple late-night snack! The combination of soft tofu, spicy and sweet kimchi, and savory pork belly is always a winner. It’s hearty enough to be a meal even without rice, so try making this delicious Dubu Kimchi easily and deliciously!
Main Ingredients
- Pork belly: 1 handful (approx. 150g)
- Tofu: 1 block (firm or stewing tofu)
- Well-fermented kimchi: 1 handful (approx. 150g)

- Sugar: 1/2 tsp
- Gochugaru (Korean chili flakes): 1/2 tsp (adjust according to kimchi’s spiciness)

Cooking Instructions
Step 1
First, prepare the star of Dubu Kimchi: the tofu. Cut it into bite-sized pieces, about 2x2cm or 3x3cm, convenient for eating with kimchi. For a firmer texture that won’t break apart easily, you can lightly blanch the tofu in boiling water. (Optional)
Step 2
Next, chop the well-fermented kimchi into bite-sized pieces, about 1cm wide. While it’s delicious to eat with just tofu, today we’ll add pork belly for extra flavor.
Step 3
For the pork, we recommend using pork belly, as its moderate fat content enhances the flavor when stir-fried with kimchi. If you prefer less fat, pork shoulder or front leg can be used, but pork belly blends exceptionally well with the savory notes of kimchi, making it extra delicious.
Step 4
Heat a pan over medium heat, then add the sliced pork belly. Cook until it’s golden brown and crispy. Once the pork fat has rendered, add the chopped kimchi and stir-fry together. When the kimchi begins to soften, add the sugar and gochugaru. Increase the heat to high and stir-fry quickly until everything is well combined. If your kimchi is too sour, add a little more sugar to balance the taste.
Step 5
Finally, arrange the stir-fried kimchi and pork belly, along with the prepared tofu, beautifully on a serving plate. Your delicious Dubu Kimchi is ready! Enjoy it by pairing warm tofu with the spicy stir-fried kimchi and savory pork belly.
