This carrot hummus combines the creaminess of chickpeas with the natural sweetness and rich beta-carotene of carrots, making it a perfect blend of taste and nutrition. It’s an incredibly versatile dip that’s fantastic as a salad dressing or a spread for bread.^^
Hummus Base Ingredients
- 150g dried chickpeas
- 150g fresh carrots
- 2 Tbsp extra virgin olive oil
- 2g rock salt (or to taste)
- 2 cloves garlic
- 2 Tbsp lemon juice
Creamy Tahini Sauce (Sesame Paste)
- 1/4 cup unroasted sesame seeds (standard paper cup measurement)
- 4 Tbsp olive oil
- 1/4 cup unroasted sesame seeds (standard paper cup measurement)
- 4 Tbsp olive oil
Cooking Instructions
Step 1
The first step to making delicious hummus! Prepare 150g of dried chickpeas, rinse them thoroughly, and soak them in water for at least 8 hours. Soaking them the night before makes cooking the next day much more convenient.^^
Step 2
Place the soaked chickpeas in a pot and add water, approximately twice the volume of the chickpeas. Bring to a boil over high heat, then reduce to medium-low and simmer for 20-25 minutes until tender. Skim off any foam that rises to the surface during cooking for a cleaner taste.
Step 3
Prepare 150g of fresh carrots. Wash and peel them, then boil for about 20-25 minutes until tender. Carrots should be soft enough to blend smoothly. Cut them into manageable pieces for the blender.
Step 4
Let’s make the tahini sauce that will add rich flavor to our chickpea hummus. First, measure out 1/4 cup (standard paper cup measurement) of unroasted sesame seeds.
Step 5
Place the measured sesame seeds into a hand blender or food processor and blend until finely ground into a powder. Transfer the ground sesame to a clean bowl.
Step 6
Add 4 tablespoons of olive oil to the ground sesame in the bowl and whisk vigorously to combine. If the mixture is too thick, you can add a little more olive oil until you reach your desired consistency. Your creamy tahini sauce is now ready!
Step 7
Combine the boiled and slightly cooled chickpeas with the tender cooked carrots in the blender. Add about 1 cup (standard paper cup measurement) of the chickpea cooking water and 2g of rock salt for seasoning. (You can substitute with sea salt if preferred.)
Step 8
Add 2 peeled garlic cloves to the blender to enhance the aromatic flavor. The amount of garlic can be adjusted to your preference.
Step 9
Pour in 2 tablespoons of lemon juice for a refreshing tang. Using freshly squeezed lemon juice will provide the best flavor.
Step 10
Add 2 tablespoons of extra virgin olive oil to the blender for a smooth texture. Olive oil will deepen the overall flavor profile of the hummus.

Add all of the prepared tahini sauce to the blender. Now that all ingredients are in, blend until the mixture is smooth and creamy. Blend thoroughly for the best result.

Your smooth and vibrant carrot hummus is ready! Check the consistency to ensure it’s blended perfectly.

Transfer the finished carrot hummus to a serving bowl. For an attractive presentation, garnish with a few reserved boiled chickpeas. You can also sprinkle a pinch of dried parsley or garlic powder for extra flair.

To store your carrot hummus for a longer period, cover the surface generously with olive oil. This helps prevent oxidation by minimizing contact with air, keeping your hummus fresher for longer.
