  • 2 Tbsp pancake mix (buchim garu)
  • 1/4 cup water (approx. 50ml)
  • 1/3 tsp salt
  • 1 slice cheddar cheese
  • A little mozzarella cheese (to taste)

Cooking Instructions

Step 1

Wash and peel one medium-sized carrot. Using a julienne peeler or a knife, shred the carrot into very thin and fine strands. Shredding them finely in the ‘rapé’ style is key for a pleasant texture!

Step 2

Place the shredded carrots in a large bowl and add 1/3 tsp of salt. Gently mix and massage the carrots for about 10 minutes. Salting draws out excess moisture, which helps prevent the batter from becoming too watery and enhances the carrot’s natural sweetness.

Step 3

After 10 minutes, drain any excess liquid released from the carrots. Add 2 tablespoons of pancake mix and mix well, ensuring the powder coats the carrot shreds. The pancake mix will absorb the moisture and help bind the mixture.

Step 4

Now, add 1/4 cup (approx. 50ml) of water to achieve the desired batter consistency. The mixture should be thick enough to hold its shape when formed into a pancake, with the carrot shreds sticking together. If it’s too stiff, add water a tablespoon at a time. If it’s too runny, add a tablespoon of pancake mix. Mix until everything is evenly combined.

Step 5

Heat 2 tablespoons of cooking oil in a frying pan over medium heat. Generously oiling the pan is important for a crispy pancake. To check if the oil is hot enough, drop a tiny bit of batter into the pan; it should sizzle immediately.

Step 6

Spoon portions of the carrot batter into the hot pan, shaping them into round, flat pancakes. Making them bite-sized is ideal for children. Spreading them relatively thin will ensure they cook through evenly.

Once the edges of the pancake appear set and the bottom is golden brown, carefully flip it using a spatula. Avoid flipping too early, as the pancake might break apart. Ensure it’s cooked sufficiently before flipping.
