Ingredients
  • 1 whole duck, cleaned
  • 1 sachet of medicinal herbs for duck soup (e.g., angelica tree root, astragalus, schisandra, cinnamon)
  • 1.5L water
  • 1/2 onion, cut into large pieces
  • 1 stalk of green onion, cut into large pieces
  • 7 cloves garlic
  • 1 piece of ginger (thumb-sized)
  • 1 cup glutinous rice (sweet rice)
  • 1/2 cup mung beans
  • A handful of chives, chopped (for garnish)

Cooking Instructions

Step 1

First, thoroughly wash the glutinous rice and mung beans. Soak them in cold water for at least 1 hour until softened. Once soaked, place the glutinous rice and mung beans into a cheesecloth or a reusable broth bag and tie it securely to prevent them from scattering during cooking. This will help them maintain their shape.

Step 2

In a pot, combine the sachet of medicinal herbs and 1.5L of water. Bring to a boil over high heat. Once boiling, reduce the heat to medium-low and simmer for 15-20 minutes to allow the flavors and aroma of the herbs to infuse into the broth. Using a pressure cooker can significantly reduce the cooking time.

Step 3

Add the cleaned whole duck, whole garlic cloves, ginger, and the large pieces of onion and green onion to the prepared herbal broth. Now, also add the prepared cheesecloth bag or broth bag containing the soaked glutinous rice and mung beans. Ensure the ingredients are submerged; if needed, add a little more water.

Step 4

Cover the pot and bring to a boil over high heat. Once boiling, reduce the heat to medium-low and let it simmer for 40 minutes to 1 hour, or until the duck is very tender. It’s important to cook the duck until it’s thoroughly tender. If the broth reduces too much during cooking, you can add more water. Pierce the duck with a chopstick or fork to check if it’s fully cooked.

Step 5

Carefully transfer the tender, cooked duck to a large serving bowl. Remove the onion and green onion pieces that were cooked in the broth and ladle a generous amount of the clear, rich broth over the duck. Finally, garnish generously with freshly chopped chives on top of the duck for a beautiful presentation. Your nourishing Duck ‘Baeksuk’ is ready!
