Ingredients
  • 250g beef for soup (stew meat), cut into bite-sized pieces
  • 20g dried seaweed (miyeok)
  • 2 Tbsp sesame oil
  • 1.5 liters water
  • 2 Tbsp soy sauce for soup (ganjang)
  • 1 Tbsp anchovy sauce (or fish sauce)

Cooking Instructions

Step 1

First, soak the 20g of dried seaweed in plenty of water for about 15-20 minutes until fully rehydrated. Rinse the rehydrated seaweed several times under clean water to remove any impurities. Squeeze out excess water thoroughly by hand.

Step 2

Heat 2 tablespoons of sesame oil in a deep pot over medium heat.

Step 3

Add the 250g of beef for soup to the pot and stir-fry until the pink color disappears. Use a spatula to break apart the beef pieces as they cook, ensuring they don’t stick together.

Step 4

Once the beef is mostly no longer pink, add the squeezed, rehydrated seaweed (cut into bite-sized pieces) to the pot. Sauté the seaweed and beef together over medium heat for about 5 minutes, stirring well. This step is crucial for softening the seaweed and infusing the beef with flavor. Continue to sauté until the seaweed looks wilted and tender.

Step 5

While stir-frying the seaweed and beef, add 1 tablespoon of soy sauce for soup and continue to cook. This initial sauté with soy sauce helps the seaweed absorb savory notes, leading to a richer flavor profile.

Step 6

Now, pour 1.5 liters of water into the pot with the sautéed seaweed and beef. Increase the heat to high and bring it to a boil. Leaving the lid off while it boils helps to further develop the flavors.

Step 7

Once the soup comes to a rolling boil, reduce the heat to medium. Add the remaining 1 tablespoon of soy sauce for soup and 1 tablespoon of anchovy sauce to adjust the seasoning. Then, lower the heat to low, cover the pot, and let it simmer gently for at least 30 minutes. The longer it simmers, the deeper and richer the flavor of the beef broth and seaweed will become, resulting in a more complex taste.

The key to a delicious seaweed soup is to let the natural flavors of the ingredients shine. Simmering slowly over low heat for an extended period allows the beef broth and seaweed to meld beautifully, creating a deep flavor while ensuring the seaweed is wonderfully tender and easy to eat.
