Tteokbokki Ingredients
- Rice cakes (tteok) for 2 servings (approx. 300-400g)
- 1/3 head of cabbage
- 3 stalks of green onion
- 2 hard-boiled eggs
- 3 sheets of fish cakes (eomuk)
Tteokbokki Sauce
- 3 Tbsp sugar
- 3 Tbsp gochujang (Korean chili paste)
- 3 Tbsp fine gochugaru (Korean chili flakes)
- 3 Tbsp soy sauce (jin-ganjang)
- 1 tsp anchovy powder (fine powder)
- 3 Tbsp sugar
- 3 Tbsp gochujang (Korean chili paste)
- 3 Tbsp fine gochugaru (Korean chili flakes)
- 3 Tbsp soy sauce (jin-ganjang)
- 1 tsp anchovy powder (fine powder)
Cooking Instructions
Step 1
First, prepare the vegetables and fish cakes for the tteokbokki. Cut the cabbage into large pieces and slice the green onions diagonally or into large chunks. Cut the fish cakes into bite-sized pieces as well. Make sure to have your hard-boiled eggs ready.
Step 2
Any type of rice cake (tteok) will work. For two servings, use about 300-400g, or slightly less if you’re including the hard-boiled eggs. Rinse the rice cakes lightly to prevent them from sticking together.
Step 3
In a pot, combine 500ml (about 2 cups) of water with 1 tsp of fine anchovy powder. Then, add the key sauce ingredients: 3 Tbsp gochujang, 3 Tbsp fine gochugaru, 3 Tbsp sugar, and 3 Tbsp soy sauce. Stir well to dissolve the powders and pastes. Pre-mixing the sauce ensures even flavor distribution and prevents clumps.
Step 4
Add the prepared rice cakes and cabbage to the pot, and bring to a boil over high heat. Once boiling, reduce the heat to medium and cook until the rice cakes are soft and chewy. Fish cakes tend to get mushy if overcooked, so add them towards the end, about 1-2 minutes before the tteokbokki is done. Finally, add the hard-boiled eggs and simmer for another minute.
Step 5
If the tteokbokki becomes too thick or salty, gradually add a little more water to reach your desired consistency. While the provided measurements are usually spot on, you can adjust the seasoning based on your preference and the saltiness of your ingredients. Once all the ingredients are well-coated and the sauce has thickened to your liking, your delicious snack bar-style tteokbokki is ready!
