On days when you really, really don’t feel like cooking! When you’re tired of delivery food and instant meals, but still want a home-cooked meal. This is the perfect dish to solve your hunger. Make this delicious bento box, reminiscent of childhood lunches, easily at home.

Main Ingredients
  • 1 bowl of cooked rice
  • 1 egg
  • 1 bowl of well-fermented kimchi (chopped into bite-sized pieces)
  • 2 slices of Spam (about 0.5cm thick)

Seasonings & Additional Ingredients
  • 1 tsp minced garlic
  • 0.5 Tbsp sugar (adjust according to kimchi’s sourness)
  • 1 Tbsp cooking oil
  • 1 Tbsp perilla oil
  • 0.5 tsp toasted sesame seeds
  • 1 tsp sesame oil
  • A pinch of seaweed flakes
  • A pinch of red pepper flakes (optional)

Cooking Instructions

Step 1

Heat 1 Tbsp of cooking oil in a pan over medium-low heat. Add the chopped kimchi, 1 tsp minced garlic, 0.5 Tbsp sugar, and a pinch of red pepper flakes (optional). Stir-fry slowly, being careful not to burn the kimchi. If the kimchi is very sour, you can add a little more sugar. If you feel it lacks savory flavor, a tiny amount of a seasoning like Dasida can be added. Cooking over high heat can easily burn the kimchi, so it’s important to cook it gently over low heat.

Step 2

Continue to stir-fry the kimchi over low heat, and it will wilt down, becoming this moist and delicious kimchi stir-fry. The seasonings will be well absorbed, making it look very appetizing.

Step 3

Prepare the fried egg to your preference – either fully cooked (hard-yolk) or runny (soft-yolk). A soft-yolk egg with its runny yolk will add an even creamier texture.

Step 4

I prepared 2 slices of Spam, cut about 0.5cm thick. Pan-frying them adds extra flavor and makes them delicious.

Step 5

Now, let’s assemble the delicious bento box! Start by nicely arranging the warm white rice in a clean bowl or bento box.

Step 6

Next, place a small amount of the stir-fried kimchi on top of the rice, covering it lightly. Don’t add too much, or it might be too salty; adjust to your taste.

Step 7

Arrange the pan-fried Spam slices neatly on top of the stir-fried kimchi. The savory taste of Spam will complement the rice and kimchi perfectly.

Step 8

Finally, place the fried egg, prepared to your liking, on top of the Spam. If it’s a soft-yolk egg, you can gently break the yolk before placing it for a richer taste.

Step 9

Once all the ingredients are in place, sprinkle some seaweed flakes attractively over the top. Drizzle a little sesame oil and sprinkle toasted sesame seeds. The fragrant aroma of sesame oil will make this bento box even more appealing. Enjoy your meal!
