Ingredients
- Canned corn (drained) 340g
- 1/10 Onion
- 1 Tbsp Sugar
- 4 Tbsp Mayonnaise
- 1 cup Mozzarella cheese
- 1 Tbsp Butter
- Parsley (for garnish) a pinch
Cooking Instructions
Step 1
First, drain the canned corn thoroughly using a sieve. It’s important to remove as much water as possible, as excess moisture can dilute the rich corn flavor. Pat it dry if needed.
Step 2
Melt 1 tablespoon of butter in a heated frying pan (or a pot) over medium-low heat. Once the butter has melted, add the drained corn and stir-fry. Ensure the corn is evenly coated with the melted butter for a rich flavor.
Step 3
Finely mince the onion. The goal is to add its flavor and sweetness without having large onion pieces, so mince it as finely as possible. Add the minced onion to the pan with the corn and sauté until the onion becomes translucent. The sweetness from the onion will blend wonderfully with the corn.
Step 4
When you notice that most of the moisture from the corn and onion has evaporated and the mixture looks slightly dry, add 1 tablespoon of sugar. Stir and cook for a minute or two. This caramelizes the sugar and enhances the corn’s natural sweetness, adding another layer of delicious flavor.
Step 5
Once the onions are nicely sautéed and fragrant, turn off the heat temporarily. Now, add 4 tablespoons of mayonnaise and mix it thoroughly with the corn mixture. The warmth of the corn will help the mayonnaise blend smoothly, creating a creamy texture. Spread the mixture evenly across the bottom of the pan to create a good base for the cheese.
Step 6
Generously sprinkle 1 cup of mozzarella cheese over the spread-out corn mixture. You can adjust the amount of cheese to your preference. Once the cheese is added, cover the pan with a lid and turn the heat to low. Let it cook gently until the cheese is fully melted and gooey. Cooking on low heat prevents burning and ensures the cheese melts beautifully.
Step 7
When the mozzarella cheese has completely melted and looks irresistibly golden and bubbly, turn off the heat. Finally, sprinkle a pinch of dried parsley over the top for garnish.
