Main Ingredients
- 2 cups rice
- 2 cups water
- 1 pack King Oyster Mushrooms
- 4 pinches salt
- 100g beef (for bulgogi)
Seasoning Sauce
- 3 Tbsp soy sauce
- 1 Tbsp plum syrup (maesilcheong)
- 1 Tbsp sesame oil
- 2 Tbsp perilla powder (deulkkae garu)

King Oyster Mushrooms are a versatile ingredient, known for their chewy, meat-like texture and rich flavor, even without meat. They are excellent for vegetarian dishes, stir-fries, salads, and pancakes.

Today, I’ve prepared a simple and delicious one-bowl pot rice recipe featuring plenty of these wonderful mushrooms. Let me share the secrets to making it!

First, thoroughly wash 2 cups of rice. Add 2 cups of water to the washed rice and let it soak for about 30 minutes. A tip here: since the mushrooms will release moisture, use slightly less water than you normally would for pot rice. We’ll be cooking the rice directly in this pot.

Now, let’s prepare the mushrooms. King Oyster Mushrooms have thicker stems than regular oyster mushrooms, so cut them into two pieces for easier eating. It’s best to clean them by wiping off any dirt or dust with a damp kitchen cloth rather than washing them directly with water. This helps preserve their unique flavor and texture.

Heat a pot (without oil) over medium heat. Add the prepared mushrooms and 4 pinches of salt. Sauté the mushrooms until they release their moisture and become tender, and a fragrant, nutty aroma develops.

Meanwhile, let’s marinate the beef. In a bowl, combine 100g of beef with 1 Tbsp soy sauce, 1 Tbsp minced garlic, 1 Tbsp cooking wine, and 1 Tbsp sesame oil. Mix well and let it marinate for about 10 minutes.

Stir-fry the marinated beef in a pan over medium heat. While the King Oyster Mushrooms provide a wonderful meaty flavor on their own, I’m adding beef because my family loves meat! (You can omit this step if you prefer).

Let’s also prepare the seasoning sauce to go with the rice. In a small bowl, mix together 3 Tbsp soy sauce, 1 Tbsp plum syrup, 1 Tbsp sesame oil, and 2 Tbsp perilla powder until well combined.
