Main Ingredients

  • 100g ‘Soonjung’ king oyster mushrooms
  • 2 heads of bok choy, washed and separated

Savory Soy Sauce Marinade
  • 2 Tbsp soy sauce
  • 2 Tbsp oyster sauce
  • 1 Tbsp granulated sugar
  • 1 Tbsp corn syrup or similar
  • 1/2 Tbsp minced garlic
  • 3 Tbsp cooking wine (mirin or sake)
  • 9 Tbsp water
  • 5 dried red chili peppers (optional, for mild heat)
  • Pinch of black pepper

Finishing Touches & Others
  • 2 Tbsp sesame oil
  • 2 Tbsp toasted sesame seeds
  • Cooking oil, as needed for stir-frying

Cooking Instructions

Step 1

Begin by preparing all your ingredients. Slice the onion thinly into strips and cut the green onion into 4-5cm segments. This preparation makes the stir-frying process much smoother. (Tip: Having all ingredients prepped beforehand significantly speeds up cooking and leads to a more organized experience.)

Step 2

For this recipe, we’re using the ‘Soonjung’ variety of king oyster mushrooms, developed by the Gyeonggi Agricultural Research and Extension Services. These mushrooms offer a mild yet rich flavor that will deepen the complexity of your dish.

Step 3

Soak the wide glass noodles in warm water for 30-40 minutes until they are pliable and soft. Properly rehydrated noodles will be wonderfully chewy and less likely to break during cooking. (Tip: If you’re short on time, you can also boil the noodles in water for about 10 minutes. Drain the soaked noodles well before use.)

Step 4

Score the body of the squid in a crosshatch pattern. This technique helps the sauce penetrate better and improves texture. Cut the squid into bite-sized pieces. Clean the abalone and remove it from the shell, then slice it. Prepare the ‘Soonjung’ king oyster mushrooms and bok choy by washing them.

Step 5

Heat a generous amount of cooking oil in a wok or deep skillet over medium heat. Add the sliced onions and stir-fry for about 2-3 minutes until they become translucent, releasing their natural sweetness.

Once the onions have softened, add the prepared shrimp to the skillet. Continue to stir-fry over medium heat for 3-4 minutes, or until the shrimp turn a vibrant pink color.

Now, add the abalone, squid, ‘Soonjung’ king oyster mushrooms, and green onions to the skillet. Pour in the pre-mixed soy sauce marinade. Stir-fry everything together over medium heat for about 2-3 minutes, ensuring all ingredients are well combined and coated in the sauce. (Tip: For a milder version suitable for children, omit the dried chili peppers from the marinade or use just a tiny amount to control the heat level.)

Step 8

Add the rehydrated wide glass noodles to the skillet. Continue to stir-fry over medium heat for about 1 minute, allowing the noodles to absorb the flavors of the sauce and other ingredients.

Step 9

Finally, add the bok choy. Increase the heat to high and stir-fry for just 1 minute. This quick cooking method will keep the bok choy crisp and vibrant. (Tip: If you have bean sprouts, feel free to add them along with the bok choy for an extra layer of texture.)

Step 10

Once everything is stir-fried to perfection, turn off the heat. Drizzle generously with sesame oil and sprinkle with toasted sesame seeds. Gently toss everything together to distribute the aromas and flavors.
