- 40g Unsalted Butter (softened)
- 25g Granulated Sugar
- 15g Honey
- 35g Cake Flour (or All-Purpose Flour)
- 20g Almond Flour
- 1g Baking Powder (approx. 1/4 tsp)

- 5g Lemon Juice (approx. 1 tsp)
- 1 drop Vanilla Extract (optional)
- 2 pinches Salt (approx. 1/8 tsp)
Cooking Instructions
Step 1
First, in a bowl, cream the softened unsalted butter until smooth. Add the granulated sugar, honey, salt, and lemon juice, then whisk until the sugar is mostly dissolved. It’s okay if a few sugar crystals remain.

Be mindful of the butter’s temperature, especially in warm weather, as it can soften too quickly. If it becomes too soft, briefly chill it in the refrigerator before proceeding.

Lightly beat the egg in a separate small bowl. Gradually add the beaten egg to the butter mixture in 2-3 additions, whisking gently after each addition until incorporated. If you have vanilla extract, add a drop or two at this stage to enhance the flavor.

Sift the cake flour, almond flour, and baking powder directly over the wet ingredients. Using a whisk or spatula, gently fold the dry ingredients into the wet ingredients using a ‘figure 8’ motion. Mix just until no dry streaks remain; overmixing can lead to tough madeleines.
