Melt-in-Your-Mouth Egg Sandwich Perfection

Ingredients
- 6-8 large eggs
- 4 slices of bread
- 3 Tbsp mayonnaise
- A pinch of black pepper
- 1 Tbsp sugar
- A little salt

Step 1
First, boil the eggs for 10 minutes until fully cooked. Then, immediately transfer them to an ice bath and let them sit for 5 minutes. This chilling process makes the eggs firm and easier to mash, and also helps with peeling.
Step 2
Carefully peel the cooled boiled eggs and separate the yolks from the whites. Mash the egg whites finely using a fork or a sieve for a smoother texture; this is recommended for a super tender filling. If you prefer a slightly chunkier texture or find sieving difficult, you can simply finely chop the egg whites – it will still be delicious!
Step 3
Combine the mashed yolks and the prepared egg whites in a medium bowl. Add 3 tablespoons of mayonnaise, 1 tablespoon of sugar, and a pinch of black pepper for a flavor boost. You can also add a tiny bit of salt to taste, if desired. Mix everything thoroughly until well combined, creating a creamy and delicious egg salad filling.
Step 4
Now, let’s assemble the sandwiches. Lightly spread a thin layer of mayonnaise on one side of each of the four bread slices. This adds a touch of creaminess and helps the egg mixture adhere to the bread. Spoon half of the prepared egg salad onto two of the bread slices, spreading it evenly.
Step 5
Spread a thin layer of mayonnaise on the remaining two slices of bread. Carefully place these slices, mayonnaise-side down, on top of the egg salad to complete the sandwiches.
