Essential Ingredients
  • 2 fresh tomatoes
  • 1 large potato
  • 1 large crisp carrot
  • 1 sweet onion
  • 1/4 head of crisp cabbage
  • 1 head of fresh broccoli
  • 1 apple
  • 1/2 packet of curry powder for flavor
  • 1 container of Dibella tomato puree for rich flavor
  • A little extra virgin olive oil
  • 1/2 Tbsp minced garlic
  • 100g unsalted butter

Cooking Instructions

Step 1

First, prepare the star vegetables of today into bite-sized pieces. Chop the onion, potato, carrot, broccoli, and cabbage into suitable sizes. Core the apple and chop it along with the vegetables.

Step 2

Lightly score the skin of the tomatoes with a cross (+) shape. This will make peeling them much easier later.

Step 3

Heat a generous amount of olive oil in a deep pot. Add the chopped onion, 1/2 Tbsp of minced garlic, and 1/4 of the unsalted butter (100g). Sauté over medium-low heat until the onion becomes soft and translucent. Slowly cooking the onion is key.

Step 4

Once the onion starts to caramelize sweetly, reduce the heat to low. Now, add the harder vegetables in order: first the potato and carrot, stir-fry slightly, then add the broccoli and cabbage. Follow with the scored tomatoes and apple. Lastly, pour in 1 container of Dibella tomato puree and 1/2 packet of curry powder. Gently mix everything together until well combined. Adding the tomato puree enhances the soup’s umami flavor, significantly upgrading its taste!

Step 5

Now, simmer on low heat for 1 to 2 hours, or until it reaches your desired consistency. Remember to stir occasionally to prevent sticking to the bottom while it simmers gently. Once cooked, ladle the witch soup into a nice bowl. For an extra touch, sprinkle with parsley flakes or garnish with fresh basil leaves for a beautiful presentation.
