Warm Your Soul with This Flavorful Beef and Radish Soup
On weekend mornings when you’re pondering what to make for breakfast, we introduce a hearty and comforting Korean Beef and Radish Soup made with premium beef. Its clear, refreshing broth, tender beef, and crisp radish create a universally loved dish.
Main Ingredients
- 300g Korean beef for soup (e.g., brisket or flank)
- 1/4 Korean radish (about 300g)
- 1 stalk of green onion
Cooking Instructions
Step 1
Let’s start cooking a delicious and hearty Korean Beef and Radish Soup!
Step 2
First, lightly rinse the beef for soup in cold water to remove excess blood, then thoroughly pat it dry with paper towels. Heat 2 tablespoons of sesame oil in a pan over medium heat. Add the beef and stir-fry until it turns a nice golden brown on all sides. This step helps to enhance the beef’s savory flavor and create a deeper broth.
Step 3
Peel the Korean radish and slice it into bite-sized pieces, about 1cm thick. Add the sliced radish to the pan with the beef and stir-fry together for another 2-3 minutes. Once the radish starts to look slightly translucent, pour in 5 cups (about 1L) of rice water. Rice water adds a smooth texture and a subtle, nutty flavor to the soup, making it even more delicious.
Step 4
As the broth begins to boil, impurities and foam may rise to the surface. Skim off any foam or impurities with a spoon. This will ensure a clear and clean-tasting soup. Add 1 tablespoon of minced garlic and let it simmer for a short while longer.
Step 5
Wash and thinly slice the green onion. Once the soup is boiling, add all the sliced green onion and let it simmer to infuse the broth with its fresh, savory flavor.
Step 6
Add 1 tablespoon of soup soy sauce (Guk-ganjang) to season. Soup soy sauce adds umami and gives the broth a pleasant color.
Step 7
Finally, taste the soup and adjust the seasoning with coarse sea salt if needed. Using coarse sea salt adds depth and a clean salty flavor. (You can adjust the amount of soy sauce or salt according to your preference.)
Step 8
Your delicious Korean Beef and Radish Soup is ready! Enjoy a hearty meal with a warm bowl of rice.
