Kimchi Fried Rice Omelette: A Special Meal to Enjoy at Home

Main Ingredients
- 1 strip Bacon (approx. 30g)
- 1/8 Zucchini (approx. 30g)
- 3 Tbsp White part of Green Onion (chopped)
- 1 tsp Minced Garlic (approx. 10g)
- 1 handful Well-fermented Kimchi (approx. 100g, chopped)
- 2 Tbsp Pickled Cucumber (chopped, optional)
- 1 bowl Warm Rice (approx. 200g)
- 2 Fresh Eggs
Egg Mixture and Seasoning
- 1 Tbsp Milk
- 1 Tbsp Water
- 3 Tbsp Cooking Oil (for stir-frying)
- Ketchup, to taste (for garnish)
- 1/2 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Toasted Sesame Seeds
- 1/2 Tbsp Sesame Oil
- 1 Tbsp Milk
- 1 Tbsp Water
- 3 Tbsp Cooking Oil (for stir-frying)
- Ketchup, to taste (for garnish)
- 1/2 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Toasted Sesame Seeds
- 1/2 Tbsp Sesame Oil
Cooking Instructions
Step 1
Prepare all ingredients. Cut the bacon into 1cm strips, and finely mince the zucchini. Chop the green onions. Remove excess liquid from the kimchi and chop it finely. Chop the pickled cucumber after squeezing out excess water. (Adjust quantities based on the sourness of the kimchi and pickled cucumber.)
Step 2
Place the bacon in a pan heated over medium heat and cook until golden brown on both sides. Flip them occasionally to render out sufficient fat.
Step 3
Remove the cooked bacon and place it on a paper towel to absorb excess oil. Then, cut it into bite-sized pieces (about 1cm).
Step 4
In the same pan used for the bacon, add 3 tablespoons of cooking oil. Reduce the heat to medium-low and add the finely chopped zucchini, chopped green onions, and minced garlic. Stir-fry until fragrant. Be careful not to burn the garlic.
Step 5
Add the chopped kimchi and stir-fry until the sourness of the kimchi mellows out. The kimchi should become tender and glossy.
Step 6
Add the prepared pickled cucumber and stir-fry for about 1 minute, mixing gently. The pickled cucumber adds a refreshing taste. (Optional)
Step 7
Add one bowl of warm rice and break up the rice clumps with a spatula, mixing well with the ingredients.
Step 8
Add the sliced bacon and stir-fry together with the rice again. Ensure all ingredients are evenly mixed with the rice.
Step 9
Reduce the heat to low. Add 1/2 tablespoon of gochugaru, 1 tablespoon of toasted sesame seeds, and 1/2 tablespoon of sesame oil. Mix well until the seasonings are evenly distributed throughout the rice. Taste and adjust seasoning with salt or soy sauce if needed.
Step 10
In a bowl, crack 2 fresh eggs. Add 1 tablespoon of milk. Milk helps to make the omelette extra tender.
Step 11
Add 1 tablespoon of water and gently whisk the eggs with a whisk, as if removing the egg white strings. Avoid over-whisking to prevent too much foam. It’s important to mix until smooth without any clumps.
Step 12
Lightly grease a clean pan with cooking oil and heat it over low heat. Gently wipe the pan with a paper towel to ensure the egg spreads evenly. Carefully pour the whisked egg mixture into the preheated pan.
Step 13
Gently swirl the pan to spread the egg mixture into a thin, even layer. Wait until the edges of the egg just begin to set over low heat.
Step 14
Turn off the heat when the egg is almost cooked but still slightly unset in the center. The residual heat from the pan will finish cooking it.
Step 15
Place a generous portion of the prepared kimchi fried rice in the center of the almost-cooked omelette. Use a spatula to gently press the rice down, shaping it. Be careful not to let the rice spread out too much.
Step 16
Carefully fold the sides of the omelette over the rice to enclose it. Since the egg is thin, it might tear, so it’s best to gently slide it towards the edge of the pan to fold. (Minor tears are okay.)

Place a plate over the pan, hold both the plate and the pan together, and quickly invert them to plate the omelette.
Step 18
Use a spatula or turner to support the omelette as you slide it onto the plate, preventing it from tearing. Gently tuck in any escaped egg with your fingers or the spatula to neaten the shape.
