Chewy and Sweet Jujube Yeakbap Made Easily with an Electric Rice Cooker
I wanted to recreate the comforting yeakbap my mother used to make when I was young, so I decided to make it myself. This recipe utilizes an electric rice cooker for a simple and convenient way to enjoy this traditional Korean treat. It’s not overly sweet and has a wonderfully chewy texture.
Yeakbap Ingredients
- 400g Sweet Rice (Glutinous Rice)
- 200g Dried Jujubes (seeds removed), or up to 200g of other ingredients like sunflower seeds, soaked beans, or chestnuts
Seasoning
- 60ml Soy Sauce (Korean Jin-ganjang)
- 60g Sugar (can be increased to 70-75g for a sweeter taste)
- 1 Tbsp Sesame Oil
- 1 tsp Cinnamon Powder
- 250ml Water

Cooking Instructions
Step 1
Rinse the sweet rice thoroughly and soak it in cold water for about 50 minutes to 1 hour. It’s important not to soak it for too long, as this can make the rice mushy.
Step 2
Prepare the additional ingredients. If using dried jujubes, wash them under running water, remove the seeds, roll them up, and slice them into about 0.5cm thick pieces. If using chestnuts or beans, prepare them in bite-sized pieces as well.
Step 3
Create the yeakbap seasoning sauce. In a bowl, combine 60ml soy sauce, 60g sugar, 1 Tbsp sesame oil, 1 tsp cinnamon powder, and 250ml water. Stir well until the sugar is completely dissolved. If you prefer a sweeter flavor, you can add up to 70-75g of sugar.
Step 4
In the inner pot of your electric rice cooker, add the drained sweet rice. Place the prepared jujubes (or other additional ingredients) on top, then pour the seasoning sauce evenly over everything.
Step 5
Close the rice cooker lid and select the ‘White Rice’ or ‘Mixed Grains’ cooking mode (this may vary by cooker). The cooking time is approximately 35 minutes for the standard white rice setting.
Step 6
Immediately after cooking is complete, while the rice is still hot, gently mix everything together with a spatula. You can add extra jujubes or nuts at this stage if you like.
Step 7
Transfer the cooked yeakbap to a wide glass or stainless steel container and let it cool down for a bit. Once it has cooled enough to handle, cut it into your desired serving sizes (e.g., squares). Cutting while too hot can cause it to fall apart, so ensure it’s cooled sufficiently.
Step 8
If you have any leftover yeakbap, store it in an airtight container in the refrigerator or freezer. For freezing, it’s convenient to cut it into individual portions beforehand, making it easy to thaw and enjoy later.
