‘Jangttokttokyi,’ named for its finely chopped beef (‘ttokttok’ refers to chopping finely), is a dish similar to ‘Jangjorim’ (braised soy sauce beef) and originates from Joseon Dynasty royal cuisine. For the Jangttokttokyi
- 200g beef (stewing or braising cut)
- 1/2 onion (finely chopped or julienned)
- 1/2 green onion (finely chopped)
- 2 Tbsp soy sauce
- 1 Tbsp sugar
- 1 Tbsp minced garlic
- 1 Tbsp sesame oil
- Pinch of black pepper
For the Jangttokttokyi Fried Rice
- 100g prepared Jangttokttokyi (finely chopped or diced)
- 1 bowl of cooked rice
- 100g well-fermented kimchi (finely chopped)
- 10g dried seaweed flakes (gim)
- Sesame seeds
- A little sesame oil
- 100g prepared Jangttokttokyi (finely chopped or diced)

Cooking Instructions
Step 1
First, prepare the ingredients for the Jangttokttokyi. Cut the beef into bite-sized pieces, about 1-2 cm. Finely chop or julienne the onion, and finely chop the green onion.
Step 2
In a bowl, combine the cut beef, onion, and green onion. Add 2 tablespoons of soy sauce, 1 tablespoon of sugar, 1 tablespoon of minced garlic, 1 tablespoon of sesame oil, and a pinch of black pepper. Mix everything together thoroughly with your hands to ensure the seasonings coat the beef evenly. This marinating step will infuse the meat with deep flavor.
Step 3
Heat a frying pan over medium-high heat. Add the marinated beef and stir-fry quickly until cooked through. As the beef cooks, the sauce will thicken, creating the delicious Jangttokttokyi. Be careful not to overcook, as the beef can become tough. Transfer the cooked Jangttokttokyi to a separate plate.
Step 4
Now, let’s make the fried rice using the Jangttokttokyi. In the same pan, add the finely chopped kimchi and stir-fry briefly to mellow its sourness. Then, add the prepared Jangttokttokyi (finely chopped or diced) and stir-fry together with the kimchi. The savory flavors of the kimchi and Jangttokttokyi will meld beautifully.
Step 5
Finally, add 1 bowl of warm cooked rice to the pan and stir-fry, mixing well with the other ingredients. Continue to stir-fry until the rice is fluffy. Just before turning off the heat, sprinkle in the dried seaweed flakes, a little sesame oil, and some sesame seeds for a finishing touch. This adds a wonderful nutty aroma, completing your delicious fried rice.
