  • Water, 250ml

  • Raspberry Liqueur, 1 Tbsp (optional)

Cooking Instructions

Step 1

First, gather all your ingredients. You can easily purchase 6-inch (approximately 18cm diameter) Red Velvet cake layers online.

Step 2

The liqueur used here is ‘D Chambord Raspberry Liqueur,’ a raspberry-flavored spirit. It adds a sophisticated flavor to the cake. However, if it’s difficult to find or you prefer not to use it, feel free to omit it.

Step 3

Let’s start by making and cooling the syrup for the cake layers. In a small saucepan, combine 250ml of water and 50ml of granulated sugar. Heat over medium-low heat, stirring until the sugar is completely dissolved. If you’re using it, stir in 1 tablespoon of raspberry liqueur at this stage for extra flavor. Let the syrup cool completely before use.

Step 4

Now, let’s prepare the cream cheese frosting. Pour 250g of cold heavy cream into a clean bowl and add 50g of granulated sugar.

Step 5

Using a hand mixer or a whisk, whip the heavy cream until it reaches soft peaks, about 70-80% whipped. Be careful not to over-whip, as this can cause the frosting to separate when combined with cream cheese. The cream should hold its shape but still be soft and smooth.

Step 6

In a separate bowl, beat 350g of softened cream cheese until smooth and creamy, ensuring there are no lumps. Gradually add the whipped cream to the cream cheese in 2-3 additions, gently folding it in with a spatula. Use a sweeping or cutting motion to incorporate the cream without deflating it too much.

Step 7

If desired, stir in 1 tablespoon of raspberry liqueur for an extra flavor dimension. Your delicious cream cheese frosting is now ready to adorn your cake!

Step 8

Your cream cheese frosting is complete!

Step 9

It’s time to assemble the cake. Place one Red Velvet cake layer on a cake turntable or a flat serving plate. Using a brush, generously brush the cooled sugar syrup all over the cake layer to moisten it. This step ensures a wonderfully moist cake.

Step 10

Spread a generous layer of the cream cheese frosting over the moistened cake layer. Then, arrange fresh strawberry slices attractively on top of the frosting.

Step 11

Apply a thin layer of cream cheese frosting over the strawberries. This will help secure the next cake layer in place.

Step 12

Carefully place the second Red Velvet cake layer on top. Just like the first layer, brush it with the sugar syrup. Then, spread a thin layer of cream cheese frosting and a layer of strawberry jam. The strawberry jam adds a lovely sweetness and fruitiness.

Step 13

Arrange more fresh strawberry slices on top of the jam, and lightly spread a bit more cream cheese frosting to prepare for the final cake layer.

Step 14

Gently place the final Red Velvet cake layer on top and brush it with the sugar syrup. Now, frost the entire cake with the remaining cream cheese frosting. You can pipe decorative swirls using a piping bag, or use the back of a spoon to create a rustic, wavy pattern as shown in the photo for a beautiful finish.

Step 15

Finally, decorate the top of the cake with fresh strawberry halves, cut in half, for a beautiful presentation. Your vibrant and delicious Red Velvet cake is now complete!

Step 16

Voila! Doesn’t the finished Red Velvet cake look impressive? The rich red color pairs wonderfully with strawberries, and the combination of smooth cream cheese and moist cake is simply delightful. Its festive appearance makes it the perfect centerpiece for Christmas or New Year’s parties, guaranteed to impress your guests. Make your special occasion even more memorable with this homemade masterpiece!
