- 2 tsp Oligodang (Korean oligosaccharide syrup)
- 1 tsp Minced Garlic
- 2 tsp Soy Sauce

Nowadays, you can easily find pre-cleaned eel, which I found very convenient. I’m using that for this recipe. We’ll start by rinsing it under running water and then prepare a flavorful sauce to enjoy with the grilled eel.

Gently rinse the eel under cool running water to clean it. After washing, place it on a rack or use paper towels to pat it completely dry. Ensuring the eel is dry is key for achieving a crispy texture when grilling.

Grilling eel is quite simple. Eels tend to curl inwards towards their belly when cooked. Therefore, start by grilling the flesh side (top side) until it’s golden brown, then flip it over to grill the skin side (belly side) until cooked through.

It’s important not to apply too much sauce too early or grill for too long after basting. High heat can easily burn the sauce, which can negatively affect the taste of the eel.

Now, let’s make the star of our dish: the savory glaze! In a bowl, combine the Gochujang, Gochugaru, plum syrup, pepper, soy sauce, minced garlic, and Oligodang. Mix everything well until you have a smooth, cohesive sauce. (Tip: For an extra layer of flavor, you can mix in some store-bought Teriyaki sauce. Enjoying both sauces offers a delightful complexity.)

Once the eel is nearly cooked, brush the homemade Gochujang glaze generously over it. Since the eel is almost done, grill for just about 10 seconds on each side after applying the sauce. This quick sear helps the glaze adhere beautifully without burning.
