Among all the delicious rice cakes, Injeolmi is a personal favorite! You can easily make it at home. While buying from a store is convenient, the special experience of making rice cakes with your children will create wonderful memories. Let’s make Injeolmi, featuring the delightful chewiness and rich roasted soybean powder flavor!
Ingredients for Injeolmi
- Glutinous rice 2kg
- Fine roasted soybean powder 1 bag (approx. 5,000 KRW worth)
- Salt 1/2 tsp
- Water 200ml (for dough)
Cooking Instructions
Step 1
The first step to making delicious Injeolmi is preparing the glutinous rice! Wash the glutinous rice thoroughly, then soak it until it becomes soft and pliable. It’s best to soak it overnight for convenient cooking the next day.
Step 2
Place the soaked glutinous rice in a blender and grind it until smooth. Transfer the blended rice dough to a steamer lined with a cheesecloth or steamer mat. Steam for about 1 hour, checking for doneness periodically. Once steamed, don’t turn off the heat immediately; let it rest for about 30 minutes. This steaming and resting process will result in a wonderfully chewy rice cake.
Step 3
For that rich, nutty flavor, I purchased roasted soybean powder from a rice cake shop for about 5,000 KRW. You’ll find there’s quite a generous amount in the bag, allowing for ample use.
Step 4
Be careful, as the freshly steamed glutinous rice is very hot! Knead the dough with your hands while it’s still hot, or pound it with a pestle and mortar to achieve that signature chewy texture. To prevent the dough from sticking to your hands as you knead, dip your hands in cold water occasionally. Don’t forget to add about half a teaspoon of salt to season the dough. This kneading process can also be a great way to relieve stress!
Step 5
Shape the well-kneaded glutinous rice dough into long, log-like shapes, similar to Korean garaetteok (long rice cakes). You can enjoy these as they are for a wonderfully chewy plain rice cake.
Step 6
Roll the elongated rice cakes around in the roasted soybean powder, ensuring they are evenly coated. Coating them while they are still warm helps the powder adhere better.
Step 7
Once coated with soybean powder, use a knife to cut the rice cakes into bite-sized pieces. To prevent the knife from sticking, you can lightly dip it in cold water between cuts for cleaner slicing.
