- 50g Cheongyang peppers, finely chopped
- 50g Sugar (white or brown)

Step 1
First, thoroughly wash the Cheongyang peppers and ensure they are completely dry. Any residual moisture can affect preservation. Finely mince the dried peppers. You can use a knife or a food processor for convenience. If you prefer less heat, you can remove the seeds, but they contain much of the pepper’s fiery essence, so keeping them is fine too.
Step 2
Add the sugar to the minced Cheongyang peppers. A 1:1 ratio of peppers to sugar is a good starting point for a balanced flavor. If you’d like to mellow the spiciness, you can increase the amount of sugar slightly.
Step 3
Mix the minced peppers and sugar thoroughly with a spatula or spoon until well combined. The sugar will begin to dissolve, drawing out moisture from the peppers and creating a syrup-like consistency. Ensure there are no clumps of sugar for an even mixture.
