Hearty & Refreshing Potato Soup with Mushrooms
Deep Umami Flavor! Clear Potato Soup with Plenty of Mushrooms – Perfect for Breakfast!
This recipe features a clear and comforting potato soup, generously loaded with potatoes and fragrant mushrooms, perfect for a warm meal. Although it was made conveniently using leftover broth from a previous mandu jeongol (dumpling hot pot) meal, the rich flavor of the mushrooms makes the soup incredibly deep and delicious. We’re sharing a recipe for a soul-soothing, warm soup that’s perfect for breakfast or as a hangover cure.
Broth & Vegetables
- 1,000ml Dashi Broth (using anchovies, kelp, dried shrimp, etc.)
- 2 medium Potatoes
- 3 Shiitake Mushrooms
- 1/3 Zucchini
- 1/3 Onion
- 1/3 Scallion
Cooking Instructions
Step 1
First, prepare the dashi broth that will provide a clear and deep flavor. If you have broth prepared from the day before (using anchovies, kelp, dried shrimp, etc.), it will save you time in the morning! (If not, plain water or store-bought broth can be used.)
Step 2
Wash the main ingredient, potatoes, thoroughly, peel them, and cut them into large pieces of about 2-3cm. Remove the stems from the shiitake mushrooms and slice them. Slice the zucchini and onion into similar sizes. Finely chop the scallion.
Step 3
Pour the prepared dashi broth into a pot and bring it to a boil. Once the broth is boiling, add the large-cut potatoes and onion first. Cook for about 5-7 minutes until the potatoes become translucent. This process will help the potatoes soften and add sweetness to the broth.
Step 4
Once the potatoes start to cook, add the sliced shiitake mushrooms and zucchini, and simmer for another short while. It’s best to cook for only about 3-5 minutes so the mushrooms and zucchini don’t become too mushy. The savory aroma of the mushrooms and the sweetness of the zucchini will infuse into the broth, adding flavor.
Step 5
Add 3 tablespoons of soup soy sauce (Gukganjang) to give color and depth to the broth. Stir in 1/2 tablespoon of minced garlic. Finally, adjust the seasoning with salt to your taste. You can adjust the amount of salt according to your preference.
Step 6
This is the final step! Generously add the finely chopped scallions and sprinkle in a pinch of black pepper. Just before turning off the heat, drizzle in 1/2 tablespoon of sesame oil for a nutty aroma that makes it even more delicious.
Step 7
This simply prepared potato soup boasts an excellent flavor, surpassing many other soups, thanks to the rich broth and the deep umami from the shiitake mushrooms. If you add chewy hand-pulled noodle dough (sujebi) to this soup, it transforms into a satisfying potato sujebi, a dish the whole family will love!
