Hearty Pork Neck Yukgaejang (Spicy Beef-like Soup)

Introducing an ultra-simple Pork Neck Yukgaejang recipe introduced by Nam Bora on Pyeonstaurant. Yukgaejang, which always seemed complex and difficult, can be easily and deliciously made at home using pork neck. Whip up a wonderful meal in no time!
Pork Neck Yukgaejang
- 300g pork neck
- 4 Tbsp red chili flakes (gochugaru)
- 300g fernbrake (gosari), prepared
- 1 stalk green onion
- 1 liter (1L) store-bought beef bone broth (sagol yuksu)
- 1 Tbsp minced garlic
- 2 Tbsp anchovy sauce (myeolchi aekjeot)
- 1 Tbsp cooking wine (mirin)
- 1 Tbsp soy sauce (for soup)
Cooking Instructions
Step 1
First, prepare the main ingredients: fernbrake and green onion. Cut the fernbrake into bite-sized pieces. For the green onion, cut it in half lengthwise, then into 4-5cm long pieces. Having these prepped makes cooking much smoother.
Step 2
Now, lightly preheat a pot and add a generous amount of cooking oil. Add the pork neck and sear it over high heat until golden brown on both sides. Thoroughly searing the meat removes any gamey smell and greatly enhances the flavor.
Step 3
Once the pork neck is golden brown on the outside, cut it into bite-sized strips, about 2-3cm long. This size is perfect for eating with the broth.
Step 4
Push the seared pork to one side of the pot. In the empty space, add 4 tablespoons of red chili flakes and stir-fry them in the pork fat for about 1 minute to create chili oil. This step infuses the broth with a deep and delicious flavor.
Step 5
Once the chili oil has infused, add 1 tablespoon of minced garlic, 1 tablespoon of cooking wine, and 2 tablespoons of anchovy sauce. Mix well with the chili flake mixture. Stir-frying the garlic and anchovy sauce together adds a savory depth.
Step 6
Now, add all the prepared fernbrake to the pot. Toss everything well to ensure the fernbrake is evenly coated with the seasoning mixture. Make sure the fernbrake is well coated with the spiced mixture.
Step 7
After stir-frying the fernbrake with the seasoning, pour in 1 liter of the store-bought beef bone broth and bring it to a boil over medium heat. Using beef bone broth makes it convenient as you can achieve a deep and rich flavor without making your own stock.
Step 8
Once the broth is boiling vigorously, add all the cut green onions. Simmer for a bit longer after adding the green onions; their fresh flavor will infuse into the broth, making it even tastier.
Step 9
If you have bean sprouts at home, feel free to add them at this stage. Bean sprouts add a delightful crunch and enrich the soup’s flavor. (This step is not in the original recipe but can be added according to preference.)
