Hello everyone! It’s Sun Dung Dung. 🍳 Following up on the egg mayo sandwich, today I’ve made a filling potato salad sandwich. I’ve packed it with potatoes, carrots, and onions for a delightful crunch, and it provides a lasting sense of fullness. It’s a wholesome and satisfying sandwich!

Sandwich Ingredients
  • 1 medium potato
  • 2 eggs
  • 1/3 carrot
  • 1/2 onion
  • 2 Tbsp mayonnaise
  • 1 Tbsp whole grain mustard
  • 1g salt (approx. 1/4 tsp)
  • Pinch of black pepper
  • 1 Tbsp maple syrup or honey
  • 2 slices of bread

Cooking Instructions

Step 1

We’re making a nutritious sandwich by combining eggs and a variety of vegetables. The harmony of these ingredients will create a truly wonderful sandwich.

Step 2

Let’s prepare the star of our potato salad sandwich: the potato. Since bread is also a carbohydrate, we’ll use just one potato. 😊 We’ll be cooking it in the microwave, so it’s best to chop the potato into small pieces to speed up the cooking time.

Step 3

Place the finely chopped potato (1 medium) and 50ml of water in a microwave-safe bowl. Cover lightly and microwave for 5 minutes. (Using a microwave lid with steam vents is recommended.)

Step 4

While the potato is cooking, it’s time to finely dice the vegetables that will add a delightful crunch to our sandwich. Since we’re using the carrots and onions raw, using a food chopper (or dicing them finely with a knife) will create a more pleasant texture when bitten into.

Step 5

We’ll use pre-boiled eggs. To hard-boil eggs, place them in a pot with water, bring to a boil, and cook for about 15 minutes. (During hot summer months, always store boiled eggs in the refrigerator!)

Step 6

Separate the yolks from the boiled eggs and mash them smoothly with a fork. This will contribute to the creamy texture of the salad.

Step 7

Finely chop the egg whites with a knife. I prefer to have some texture from the egg whites, so I’ll chop them not too finely, leaving a slight bite.

Step 8

Drain the water from the potato after microwaving it for 5 minutes. Return the potato to the microwave without water and heat for another 1 minute. This step makes the potato wonderfully fluffy! (A tip for 1 medium potato!)

Step 9

Now, all the ingredients for the sandwich are ready! The star ingredients: potato, crunchy carrots and onion, and soft eggs. It’s a fantastic combination of four ingredients. (Tip: Adding cucumber, salted and drained, would enhance the color and texture, but I’ve skipped it today to keep things simple.)

Step 10

Combine the cooked potato and mashed egg yolks in a bowl. Press down firmly with a fork to mash them into a smooth consistency. The key is to achieve a lump-free, creamy potato salad.

Step 11

Sprinkle with pink salt (or regular salt) to season the salad and enhance its flavor.

Freshly ground black pepper adds a wonderful aroma and a slight kick, balancing the richness of the salad.

Step 13

Now, gather all the prepared ingredients (mashed potato, diced vegetables, chopped egg whites) and add the delicious dressing to mix them together.

Add the dressing ingredients: 1 Tbsp maple syrup, 1 Tbsp whole grain mustard, and 2 Tbsp mayonnaise. You can substitute maple syrup with honey, corn syrup, sugar, or plum extract – they all work wonderfully! Adjust to your taste.

Step 15

Mix all the ingredients and dressing well, and your delicious potato salad is complete! So easy, right?

Generously spread the finished potato salad onto the bread slices, applying it thickly. Make sure to pile it high for an even more appealing look. Now, enjoy your delicious sandwich!
