Mexican Flavors Made Easy: A Taco Rice Recipe for Any Occasion

This Taco Rice recipe was inspired by my time working part-time in the US, where I packed lunches to save money on expensive meals. I loved how simple and convenient it was to make tortillas and tacos, and the fact that they could be frozen for later enjoyment. This taco rice recipe is seasoned perfectly for my palate, but you can adjust the water content to make it more like a traditional taco filling, or add your favorite ingredients like steak, tomatoes, or shrimp for a customized dish. Main Ingredients
  • 1 box Dry Taco Kit
  • 1 pack Ground Pork (approx. 200-250g)
  • 1/2 Bell Pepper (red or orange), julienned
  • 1/2 Onion, chopped
  • A small amount of Carrot (approx. 1/4 carrot), julienned
  • A small amount of Canned Corn (approx. 2-3 Tbsp)
  • A small amount of Lettuce (approx. 1/4 head), shredded

Cooking Instructions

Step 1

First, prepare the taco kit. Typically, one box contains 10 taco shells, which can also be broken up and enjoyed as nacho chips.

Step 2

Wash the bell pepper, remove the seeds, and julienne it into thin strips.

Step 3

Rinse the lettuce thoroughly, pat it dry, and shred it into thin strips about 4-5 cm long. These julienned bell peppers and shredded lettuce will be used as toppings for the taco.

Step 4

Julienne the onion and carrot, and drain the canned corn. Feel free to use any other vegetables you have on hand.

Step 5

Heat a deep frying pan over medium heat. Add the ground pork and begin to sauté.

Step 6

Break up the pork with a spatula as it cooks to prevent clumping. Season with a pinch of black pepper while cooking to enhance flavor and reduce any porky odor.

Step 7

Once the pork is partially cooked, add the julienned onion and carrot. Sauté until the vegetables become translucent, then add 1 Tbsp of oyster sauce and stir well to combine.

Step 8

Add 1.5 Tbsp of ketchup and stir it into the mixture along with the oyster sauce. The sweet and tangy ketchup will enhance the flavor of the taco filling.

Step 9

This recipe calls for a bit more water than a traditional taco to create the ‘Taco Rice’ consistency. Add half a cup of water (about 100ml) and stir to combine the ingredients. If you prefer a regular taco filling, use only 5 Tbsp of water (about 75ml).

Step 10

Add the taco seasoning mix and stir well with all the ingredients. Simmer over low heat until the taco sauce has reduced to your desired consistency. Stir occasionally to prevent the filling from sticking to the bottom of the pan.

Step 11

Once the filling has reached your desired consistency, add 1.5 bowls of cooked rice. Mix the rice and the taco filling together with a spatula, pressing down gently to ensure the rice is evenly coated with the seasoned filling.

Step 12

When the rice and filling are well combined and resemble ‘Taco Fried Rice,’ your taco filling is ready.

Step 13

Generously spoon the prepared taco filling into the taco shells. Top with a generous amount of shredded lettuce and sprinkle with the julienned bell peppers for garnish.

Step 14

This Taco Rice, with its blend of taco sauce and rice, makes for a very satisfying and delicious meal. It’s also convenient for packing in a lunchbox. For an even richer flavor, add a generous dollop of homemade guacamole. Enjoy your delicious meal!
