Simmering a Delicious Yubu Miso Soup: A Warm and Comforting Dish

Soup Ingredients
- 2 strips fried tofu pockets (approx. 150g)
- 1 block firm tofu (approx. 300g)
- A small bunch of green onions
- 2 Korean green chilies (cheongyang peppers)
- 1/2 onion
- 100g zucchini
Seasoning
- 3 Tbsp miso paste

- 1 small handful dried anchovies (for broth, approx. 10g)
- 1 sheet dried kelp (approx. 5x5cm)
- 800ml water (approx. 4 cups)

Cooking Instructions
Step 1
First, let’s make a delicious anchovy-kelp broth. Pour 800ml of water into a earthenware pot or saucepan. Add a handful of dried anchovies and a piece of kelp, and bring to a boil over high heat. Once the water starts boiling, continue to simmer for about 5 minutes. Then, remove and discard the kelp and anchovies, keeping only the clear broth.
Step 2
While the broth is simmering, prepare the ingredients for the soup by cutting them into bite-sized pieces. Slice the fried tofu into 2-3cm strips. Cut the firm tofu into cubes. Slice the zucchini and onion into half-moons or cubes. Finely chop the Korean green chilies to add a spicy kick. Slice the green onions diagonally. Have all prepared ingredients ready.
Step 3
Add 3 tablespoons of miso paste to the prepared anchovy-kelp broth. To ensure a smoother broth, you can dissolve the miso paste through a sieve. Taste the broth and adjust the amount of miso paste according to your preference.
Step 4
After dissolving the miso in the broth, add the sliced zucchini, onion, and green chilies. Bring to a boil over medium heat. Once the vegetables begin to soften and the soup comes to a rolling boil, reduce the heat slightly.
Step 5
When the soup is bubbling nicely, add the prepared fried tofu and firm tofu. The fried tofu will absorb the delicious broth, making it even tastier. Let it simmer for a little longer. Be careful not to stir too vigorously to prevent the tofu from breaking apart.
Step 6
Finally, add the diagonally sliced green onions and simmer for just another moment until the Yubu Miso Soup is complete! For an extra spicy kick, you can add half a tablespoon of red pepper flakes; it’s delicious. Enjoy this soup while it’s hot!
