Did you know you can transform leftover tofu and beef into a comforting, delicious meal? This easy Korean beef and tofu stew, or ‘Sogogi Dubu Jjigae’, is perfect for any occasion. Its rich broth, tender beef, and silky tofu make it a crowd-pleaser. Give it a try for a satisfying home-cooked meal!
Stew Ingredients
- 500g beef (stew cut)
- 2/3 block firm tofu (approx. 300g)
- 1 pack oyster mushrooms (approx. 100g)
- 2 large eggs
- 2/3 stalk green onion (approx. 50g)
- 4 cups water (800ml)
Cooking Instructions
Step 1
Begin by preparing all your stew ingredients. Cut the tofu into bite-sized chunks. For the oyster mushrooms, trim off the tough ends and then tear them into manageable pieces. Slice the green onion diagonally. In a separate bowl, whisk the eggs until well beaten.
Step 2
Pat the beef dry with paper towels to remove any excess blood. Blanch the beef in boiling water for a minute, just until the surface changes color. This step helps remove impurities and any gamey odor, ensuring a cleaner taste for your stew.
Step 3
Heat 2 tablespoons of sesame oil in a pot over medium heat. Add the blanched beef and sauté until it’s partially cooked. Sautéing the beef in sesame oil helps develop its flavor and aroma.
Step 4
Once the beef is lightly browned, add the Korean chili flakes (gochugaru) and 1 tablespoon of minced garlic. Stir-fry them with the beef for about a minute until fragrant. Toasting the chili flakes in oil deepens their color and flavor.

Pour in 4 cups (800ml) of water. Add 2 tablespoons of fish sauce and 3 tablespoons of Korean soy sauce. Bring the mixture to a boil over high heat, then reduce the heat to medium and let it simmer for about 5 minutes to allow the flavors to meld.

Once the broth has developed a good flavor, gently add the cut tofu to the pot. Be careful not to stir too vigorously to prevent the tofu from breaking apart.
Step 7
Finally, add the prepared oyster mushrooms and sliced green onions. Slowly drizzle in the whisked eggs in a circular motion. Let the eggs cook without stirring until set. Taste the stew and adjust the seasoning with a pinch of salt and black pepper as needed. Enjoy your delicious homemade stew!
