Making Tomato Broth Tteokbokki – Tomato Recipe
Have you ever thought of adding tomatoes to your tteokbokki? We tried it, and the taste was absolutely amazing! By incorporating plenty of tomatoes, which are excellent for reducing sodium intake, this tteokbokki becomes healthier and even more delicious. It’s a dish that the whole family can enjoy together, making mealtime even more special. The combination of chewy rice cakes, tender fish cakes, crisp vegetables, and soft-boiled eggs creates a rich and satisfying experience.
Main Ingredients
- 300g chewy rice cake tteokbokki cakes
- 180g soft square fish cakes
- 4 hard-boiled eggs
- 1 packet of chewy ramen noodles
- 110g bacon, for added flavor
- 300g fresh tomatoes (about 2 medium)
- 200g cabbage (about 1/4 head), for crispness
- 1 stalk of green onion
- 2 slices of cheddar cheese, for creaminess
- 3 pieces of dried kelp (dashima), for broth
Seasoning
- 3 Tbsp minced garlic
- 1 Tbsp gochujang (Korean chili paste)
- 2 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp cooking wine (mirin or rice wine)
- 1 Tbsp oyster sauce
- 2 Tbsp sugar
- 1 Tbsp sesame seeds
- 3 Tbsp minced garlic
- 1 Tbsp gochujang (Korean chili paste)
- 2 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp cooking wine (mirin or rice wine)
- 1 Tbsp oyster sauce
- 2 Tbsp sugar
- 1 Tbsp sesame seeds
Cooking Instructions
Step 1
For the tteokbokki, we’re using rice cakes with holes, which have a wonderfully chewy texture. If your rice cakes are a bit hard, soaking them in cold water for a short while will make them more tender.
Step 2
The secret to a deep and flavorful broth! In a pot, combine 800ml of fresh water with 3 pieces of dried kelp. Bring it to a boil over high heat, then reduce to medium heat and simmer for 8 minutes. Remove the kelp; this delicious kelp-infused water will be the base for our tteokbokki broth.
Step 3
To add a variety of textures to our broth tteokbokki, cut the flat fish cakes into roughly 3cm wide pieces. Also, slice the bacon into similar-sized pieces. Adding bacon contributes a wonderful savory depth to the dish.
Step 4
Cut the fresh tomatoes into bite-sized pieces, similar in size to the tteok. The natural sweetness and slight acidity of the tomatoes will wonderfully enrich the broth’s flavor profile.
Step 5
Chop the onion and cabbage into bite-sized pieces, similar to the tomatoes. Mince the garlic finely. The sweetness and aroma from these vegetables will enhance the overall taste of the tteokbokki sauce.
Step 6

Step 7
Let’s make the delicious sauce! In the prepared kelp broth, mix together 2 Tbsp gochugaru, 1 Tbsp gochujang, 2 Tbsp sugar, 2 Tbsp cooking wine, 1 Tbsp oyster sauce, and 1 Tbsp sesame seeds until well combined and smooth. The kelp broth usually provides enough saltiness, but if you prefer it saltier, you can add a pinch of salt to taste. (I found the seasoning perfect without adding extra salt.)
Step 8
Here’s a tip for perfectly cooked noodles! Boil the ramen noodles for just about 2 minutes until they are slightly firm (‘kkodle-kkodle’). Quickly rinse them under cold water and drain well. This prevents them from becoming too soft in the tteokbokki.
Step 9
Time to start cooking! Bring the kelp broth to a rolling boil over high heat. Add the prepared fish cakes and let them cook for a moment. Then, add the cabbage, onion, and minced garlic. Allow these vegetables to cook and release their flavors into the broth.
Step 10
Once the broth is boiling, add the tteokbokki rice cakes, bacon, green onion, chopped tomatoes, and the hard-boiled eggs. Adding all these ingredients together makes for a hearty and visually appealing tteokbokki.
Step 11
Place the prepared ramen noodles in the center of the pot. Continue to simmer for just 1 more minute, allowing everything to meld together. Be careful not to overcook the ramen.
Step 12
Just before turning off the heat, lay the 2 slices of cheddar cheese on top of the tteokbokki. The melting cheese adds a lovely creaminess and richness.
Step 13
