Main Ingredients
- 2 handfuls ripe kimchi (approx. 200-250g)
- 4 eggs
- 1/4 yellow bell pepper
- 1/4 red bell pepper
- 70g sausage (your preferred type)
- 10 sheets dried seaweed (Gim)
- Plenty of mozzarella cheese (to taste)
- 4 bowls warm cooked rice

- 2-3 Tbsp ketchup (or adjust to your preference)

Cooking Instructions
Step 1
First, finely chop the kimchi into bite-sized pieces (about 1-1.5cm). If the pieces are too large, they might not mix well with the rice. If the kimchi is very juicy, you can lightly squeeze out some of the liquid.

Prepare the bell peppers by removing the seeds and dicing them into small squares, about 0.5cm in size. Crack the eggs into a bowl and whisk them well.
Step 3
To make soft scrambled eggs, lightly oil a pan and heat it over low heat. Pour in the whisked eggs and gently stir with a spatula. When the eggs are about 70% cooked, turn off the heat. The residual heat will continue to cook them, resulting in a tender texture. (If you prefer firmer scrambled eggs, cook them a bit longer.)

Dice the prepared bell peppers and sausage into small squares, similar in size to the chopped kimchi. For the sausage, it’s recommended to briefly blanch it in boiling water to remove excess oil, which enhances its flavor.

Heat a generous amount of cooking oil in a pan over medium heat. Add the chopped kimchi and stir-fry until it becomes translucent and tender. This step is crucial for developing flavor. Then, add the diced sausage and continue to stir-fry until the sausage is lightly browned. This adds a delicious aroma.

Now, add 4 bowls of warm cooked rice to the stir-fried kimchi and sausage. Gently mix with a spatula, ensuring not to mash the rice grains, until the kimchi seasoning coats every grain of rice. It’s important to break up any clumps of rice. Turn off the heat temporarily.

Crumble or snip the 10 sheets of dried seaweed (gim) into small pieces and add them to the rice. The seaweed flakes will add a nutty aroma and a pleasant chewy texture. Mix well with the rice.

Finally, add the diced bell peppers and mix lightly. The crisp texture and vibrant colors of the bell peppers will make the kimchi fried rice even more appealing and delicious. (At this stage, you can add ketchup for extra color and flavor, if desired.)

Spoon the finished kimchi fried rice into individual rice bowls, pressing it down gently to shape it. Carefully invert the bowls onto serving plates to create a neat, round mound of kimchi fried rice.

For cheese kimchi fried rice, generously sprinkle mozzarella cheese over the inverted kimchi fried rice. Microwave for about 1 minute and 30 seconds, or until the cheese is melted and gooey, creating a visually stunning dish. (You can also use an oven or air fryer.)
