Main Ingredients
- LA Galbi (Short Ribs) 2.4kg
- Pear 1/2
- Onion 1/2
- Green Onion 1/2
- Garlic 100g
- Ginger 24g
- Cheongyang Peppers 3
- Soy Sauce 1 cup
- Rice Wine or Mirin 2/3 cup
- Dark Brown Sugar 4 Tbsp
- Corn Syrup 3 Tbsp
- Black Pepper 1/2 Tbsp
- Sesame Oil 4 Tbsp
- Water (for blending + sauce) 400ml
Cooking Instructions
Step 1
The Cheongyang peppers are included to cut through richness rather than add significant heat, so don’t worry about them making the dish too spicy. Add them when you blend the other ingredients for the marinade.
Step 2
Do not soak the LA Galbi in water to remove blood. Soaking for too long will cause the juices to seep out, resulting in less flavorful meat. Instead, rinse the ribs multiple times under running water to thoroughly remove any bone fragments and blood. If you prefer less fat, you can trim off some of the excess fat from the surface.
Step 3
Chop the onion, pear, ginger, and Cheongyang peppers into pieces suitable for blending. Finely mince the white parts of the green onion.
Step 4
In a blender, combine all the ingredients for blending (except the green onion) along with 1.5 cups of water. Blend until smooth. The smoother the blend, the better the marinade will penetrate the meat.
Step 5
To the blended mixture, add the soy sauce, rice wine (or mirin), dark brown sugar, corn syrup, black pepper, and sesame oil. Pour in an additional 150ml of water and stir well until the sugar is completely dissolved.
Step 6
Place the LA Galbi in the prepared marinade and coat thoroughly. Marinate for at least 3 to 4 hours to allow the flavors to deeply infuse into the meat. For the best results, marinating overnight is highly recommended.
Step 7
Grill the LA Galbi over low heat to ensure the marinade doesn’t burn and the meat cooks through evenly. While grilling, occasionally spoon some of the marinade over the ribs to keep them moist and add a beautiful glaze.
Step 8
Once the ribs are nicely browned and the sauce has slightly reduced, remove from heat. Sprinkle with toasted sesame seeds for a final touch. Your delicious and beautifully presented LA Galbi is now ready to enjoy!
