Main Ingredients
  • 300g radish (about 1/4 of a medium radish)
  • 2 Tbsp perilla oil (1 Tbsp for sautéing, 1 Tbsp for finishing)
  • 1/2 Tbsp minced garlic
  • 1 Tbsp tuna extract (or Korean soy sauce for soup)
  • 100ml water

For Salting the Radish
  • 1/2 Tbsp coarse salt

Cooking Instructions

Step 1

Wash the radish thoroughly and peel it. Slice it into thin, 0.3cm thick pieces, then cut these pieces into thin julienne strips. Slicing them too thinly might make them mushy when cooked, so maintaining a moderate thickness is key.

Step 2

In a bowl, sprinkle 1/2 Tbsp of coarse salt over the julienned radish. Gently massage it in and let it sit for about 20 minutes. This process draws out moisture, softening the radish while preserving its crunch.

Step 3

After salting, firmly squeeze out the excess water from the radish with your hands. Leaving too much water can make the namul taste bland. Heat 1 Tbsp of perilla oil in a pot over medium-low heat. Add the squeezed radish and begin to sauté until it becomes slightly translucent.

Step 4

Once the edges of the radish start to soften, pour in 100ml of water. Add 1/2 Tbsp of minced garlic and 1 Tbsp of tuna extract. Stir everything well, then cover the pot and let it simmer gently over medium-low heat for about 10 minutes, allowing the radish to cook through and become tender. Stir occasionally to ensure even cooking.

Step 5

After 10 minutes, check if the radish is tender. Once cooked, add the remaining 1 Tbsp of perilla oil. Keep the heat at medium-low and stir-fry uncovered until the moisture in the radish reduces to a glistening consistency. Be careful not to burn it by using excessively high heat.

Step 6

Continue stir-frying until the radish is slightly reduced and glossy. Turn off the heat. Finally, sprinkle with toasted sesame seeds for a nutty finish. This delicious radish namul is ready! It’s wonderful mixed into hot rice or served as a versatile side dish.
