Cake Ingredients
  • 1 fresh ginseng root
  • 200ml cold heavy cream
  • 1 sheet of gelatin (approx. 2-3g)
  • 3 Tbsp granulated sugar (adjustable to taste)
  • 10 Lotus biscuits
  • 2 Tbsp melted butter
  • 1 sachet concentrated red ginseng extract (enhances ginseng flavor)

Cooking Instructions

Step 1

Thoroughly wash the fresh ginseng to remove any soil and pat it completely dry. Ensure the heavy cream is kept very cold in the refrigerator, as this is crucial for proper whipping.

Step 2

Place the prepared ginseng and the red ginseng extract into a blender. Blend until exceptionally smooth and free of lumps. For the gelatin, soak the sheet in cold water for at least 5 minutes until fully softened.

Step 3

Pour the chilled heavy cream into a bowl and whip using a whisk until soft peaks form, creating a smooth whipped cream. Gently fold in the blended ginseng mixture until well combined. Once the mousse filling is ready, add thinly sliced ginseng pieces. Squeeze out any excess water from the softened gelatin and add it to the mixture, stirring until it dissolves completely without any lumps.

Step 4

Crush the Lotus biscuits finely. You can do this by placing them in a zip-top bag and using a rolling pin, or by using a food processor. Mix the crushed biscuits with the melted butter to create the crumble base. Line your cake pan or mousse ring with parchment paper. Evenly spread the prepared Lotus crumble at the bottom and press down firmly to set. Carefully pour the prepared ginseng mousse filling over the crumble base, smoothing the surface gently. Place the finished cake in the freezer until completely firm. Once set, carefully unmold the cake and enjoy this delightful treat.
