Fried Rice Ingredients
  • 2 bowls of warm cooked rice
  • 5 fresh eggs
  • A little carrot, finely diced
  • A little zucchini, finely diced
  • A little shiitake mushroom, finely diced
  • A little kabocha squash, finely diced (or 1/2 sweet potato)
  • A little onion, finely diced

Seasoning & Others
  • Salt to taste
  • A pinch of black pepper
  • 1 packet of mixed vegetables for fried rice (optional)
  • 2-3 Tbsp cooking oil

Cooking Instructions

Step 1

Wash all the vegetables (carrot, zucchini, shiitake mushroom, kabocha squash, onion) thoroughly, peel them, and finely dice them into about 2-3mm pieces so they are nicely interspersed in the fried rice. For convenience, you can pre-dice vegetables and store them in the freezer for future use. Crack the eggs into a bowl, add a pinch of salt, and whisk well.

Step 2

Heat 2-3 tablespoons of cooking oil in a pan over medium heat. Add all the diced vegetables and stir-fry. Once the vegetables start releasing moisture, increase the heat to high to evaporate the moisture, which enhances their flavor. Cook for about 2-3 minutes until the vegetables become slightly translucent.

Step 3

Once the vegetables are nicely stir-fried, push them to one side of the pan. Pour the whisked eggs into the empty space and scramble them. As the eggs begin to set, mix them with the vegetables. Next, add 2 bowls of warm cooked rice. Use a spatula to break up the rice grains and stir-fry until well combined with the vegetables and eggs. Season with salt to taste and add a pinch of black pepper for flavor. If using a store-bought mixed vegetable packet for fried rice, add it at this stage and stir-fry. (You can also add a little oyster sauce or soy sauce for extra flavor, if desired.)

Step 4

Continue to stir-fry for another 3-4 minutes, ensuring each grain of rice becomes fluffy and all ingredients are well incorporated. It’s important to gently break up the rice grains with your spatula while stir-frying to prevent clumping. Proper heat control is key to making delicious fried rice without burning.

Step 5

While the fried rice is still warm, pack it firmly into a rice bowl. Place a plate over the bowl and quickly flip it over to create a beautiful, round mound of delicious fried rice. You can sprinkle with shredded seaweed or sesame seeds for an enhanced flavor.
