Guacamole Ingredients

- 12 cherry tomatoes
- 1/4 small onion

Begin by preparing the star of your guacamole: the avocado. Choose an avocado that yields slightly to gentle pressure, indicating it’s perfectly ripe. Using a sharp knife, carefully slice the avocado in half lengthwise around the pit. Gently twist the halves to separate them. To remove the pit, you can carefully tap it with your knife and twist, or scoop it out with a spoon.

Once the pit is removed, scoop the creamy avocado flesh out of the skin and place it into a mixing bowl. Using a fork or a potato masher, gently mash the avocado. Aim for a slightly chunky texture rather than a completely smooth paste, as this adds a delightful mouthfeel to your guacamole.

Next, prepare the fresh vegetables. Wash the cherry tomatoes thoroughly and pat them dry. Finely dice the tomatoes into small pieces, about 0.5 cm in size. While you can blanch and peel them for a smoother texture, today we’re keeping it simple and using them skin-on. Just dice them up and add them to your bowl.

Finely dice the quarter of an onion. If you find raw onion too pungent, a great tip is to soak the diced onion in cold water for about 5 minutes. This process helps to mellow out its sharp, biting flavor. After soaking, drain the onion thoroughly to remove excess water before adding it to the guacamole.
